Potato Chip Chicken
Tonight I was looking for a no fuss kind of dinner. When my husband isn’t home early enough to watch the kids while I cook I need something fast and simple. I had some bags of chips in the pantry that were just crumbs and I had heard about people making chicken coated in chips. After looking around I came up with this recipe. These are the ingredients I used. This is a recipe that you can play around with the ingredients and still have a great meal. Change the flavor of the chips to get some great flavors! Next time I make it I will take a picture and update this post.
Potato Chip Chicken
3 chicken breasts
3/4 cup crushed plain potato chips (I had Ruffles)
1/4 tsp onion powder
1/4 tsp paprika
Mayonnaise to coat
Directions:
Preheat the oven to 375 degrees.
Make sure you crush up the chips. You could put them in a food processor but that is extra clean up for me.
In a bowl add the chips, onion powder, and pepper.
Put some mayo in a small bowl. Use a brush to lightly coat the chicken. I coated 1 side and laid it in the bowl. Then I coated the other side and shook the bowl to coat. You really cannot taste the mayo. It makes the the chicken very moist.
I used an 8X8 pan, but if you double the recipe use a 9X13.
Bake for about 20 minutes or until cooked through. I flipped the chicken half way through because I like it crunchy.
We ate it with twice baked potatoes and broccoli. This may be one of our new favorite meals! My kids loved it!

Greek Meatballs
Last week we had a large anniversary dinner to help celebrate the 5th anniversary of Youth Ministry training in Latin America. We were expecting about 100 people but did not have a very large budget. I contacted my friend Blanca and she helped us come up with a great, affordable menu. We had meatballs, tuna sandwiches, fruit skewers with watermelon and cantaloupe, and molletes. The meatballs were better cold! So this is the recipe she gave me. She is such a good cook she doesnt need a real recipe
I have tried the recipe twice and they are getting better. So here is what I have done so far:
Greek Meatballs
1 lb ground beef
1/2 onion (grated over the meat so the juices will be soaked by it)
green bell pepper (grated over the meat)
1 tsp chicken boullion
black pepper to taste
1/2 cup cooked rice (more or less depending on your taste)
Mix all of it, scoop little meatballs, roll them in flour and fry! If you make the meatballs small enough you will have over 50!
I put 1/2 an onion and 1/2 a green pepper in a blender and purred it. I thought this was easier than using a grater. I do think it needed more green peppers than the 1/2 I used.
You can either serve them with tomato sauce or with honey bbq sauce.
