Fiest Chicken RIce Bowls

Has your child gone back to school yet? It is such a huge adjustment to get back into a schedule. My days are so busy that I need dinner recipes that are quick and easy. The day goes by so fast that I need a meal that I can throw together in less than an hour. I also love the added benefit of buying products that are part of the Campbell’s Labels for Education program. This is a great program that helps schools earn free merchandise!

Did you know there are a bunch of quick and easy recipes that use Campbell’s Soup ingredients? This recipe has been adapted from a Campbell’s Kitchen recipe – Fiesta Chicken and Rice Wraps. This website will make your meal planning so much easier.

Ingredients Campbells

 Fiesta Chicken Rice Bowls

  • 2 pounds boneless, skinless chicken breast (or cooked chicken)
  • 1 1/2 cup Pace® Picante Sauce
  • 1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 cup water
  • 2 cup uncooked instant white rice
  • 1 packet taco seasoning (or make your own)
  • Optional: Sour Cream, Mexican Cheese, Avocados, Limes

Instructions:

  1. If you are not using pre-cooked chicken, boil your chicken. When it’s cooked, shred the chicken into bite-sized pieces, and set aside.
  2. Heat the Pace® Picante Sauce, Campbell’s® Condensed Cream of Chicken Soup, and water in a 2-quart saucepan over medium heat. Bring to a boil, stirring occasionally.
  3. Add the rice and chicken into the saucepan. Cover and cook over low heat for 5 minutes. Set aside for about 3 minutes.
  4. Spoon some chicken mixture into a bowl and garnish with your favorite toppings. (Cheese, sour cream, lime juice, avocado, ect.)

Serve and enjoy!

Tip – You can make this meal stretch a lot further and make tacos. Just heat up some tortillas and serve!

You want to know why I love this meal?

  1. It’s easy and really fast – takes about 30 minutes. (Even less if you have cooked chicken!).
  2. It’s cheap! Most of these are ingredients I usually have in my house!
  3. It helps my school earn free merchandise with Labels For Education from Campbells.

I am sure you already use most of these products, so it should be easy to help your child’s school. So many programs are being cut from schools and the funding isn’t available to buy new items or update the supplies that schools really need. Together with Campbell’s Labels for Education program, we can help the schools receive the items they need with very little effort.

Make sure you visit Label’s for Education and enter the sweepstakes. They are awarding 1000 schools a $1000 prize! It’s quick and easy to enter and it could really buy a lot of needed items for your child’s school. Anyone can enter – there is no purchase necessary.

Here are some of the items you can help your school receive when you turn in your Labels for Education:

  • Gym Supplies
  • Folding Tables
  • Art Supplies
  • iPad/iPad Mini
  • Laptop
  • Even a minivan!

My school has a goal of 50,000 labels. We need to help encourage the parents to send in their labels!
