We lived in Mexico City for 12 years and never had a Cinco De Mayo party. Did you realize that Cinco de Mayo is only celebrated in 1 state in all of Mexico? It is not their Independence Day (that’s in September) but it is a celebration of a battle that was won in Pubela. Here is the US, it’s a pretty big day to celebrate and eat tacos!

If you plan on having a party, I have put together the perfect menu for you. With just a few things you will be able to have the perfect fiesta!

You always have to have dessert, so I am sharing my favorite cake recipe with you. Don’t let all the ingredients keep you from making this recipe. It is totally worth it! Once you make it, it will be your favorite recipe to impress people!

Tres Leches Cake

Cake ingredients

  • 1 cup All-purpose Flour
  • 1/4 teaspoon Salt
  • 1-1/2 teaspoon Baking Powder
  • 5 Eggs, divided
  • 1 cup Sugar, divided
  • 1 teaspoon caramel extract
  • 1/3 cup Milk

Tres Leche Mixture

  • 1 (12 oz.) Can Evaporated Milk
  • 1 (14 oz.) can Sweetened, Condensed Milk
  • 1/4 cup Heavy Cream

Icing Ingredients

  • 2 1/2 cups heavy whipping cream
  • 4 Tablespoons Sugar

Instructions:

Preheat oven to 350 degrees. Spray 2 circle pans and set aside. (Coat these very well so they just slide out of the pan.)

Separate the egg yolks from the egg whites.

Using a mixer, Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow.

Stir in milk and caramel extract.

Add the flour, baking powder, and salt over the egg yolk mixture and stir very gently until combined.

In a clean bowl, beat egg whites on high speed until soft peaks form. Add the remaining 1/4 cup sugar and beat until egg whites are stiff.

Gently fold the egg white mixture into the batter until it is just combined.

Pour into your round cake pans and let the cake mix spread evenly in the pans.

Bake for about 18 minutes or until a toothpick comes out clean.

Once the cake has cooled a little put 1 of the cakes onto a rimmed cake plate and let it cool completely. (It needs to have a rim so the milk doesn’t spill over.)

In a bowl (or 4 cup measuring cup), combine sweetened condensed milk, evaporated milk, and ¼ cup heavy whipping cream and set aside.

When cake is cool, pierce the cake with a fork several times. Slowly drizzle about 1 cup of the milk mixture—try to get as much around the edges of the cake as you can. Let this first layer sit for about 30 minutes.

In another bowl whip 2 1/2 cups of heavy whipping cream with 4 tablespoons of sugar until it is thick and looks like a thick whipped cream.

Spread a layer of the whipped topping on top of the first cake. Then add the second cake and poke it with holes and pour about another cup of the milk mixture. (You will actually have about a cup of the mixture left over.)

Wait about another 30 minutes for all the milk to be absorbed. (If you have too much you can tilt the pan over the sink but the cake should absorb the milk.)

Finish icing your cake with the rest of the whipped topping. Serve and enjoy!

**Make sure you keep this cake in the refrigerator.

This is my favorite cake ever! It is so decadent and rich. Tampico is always in our fridge, we love the mango flavor.

Sounds like a wonderful party idea. The cake recipe looks delicious and easy to make though I have never tried out Tres Leches before. I love that Mango juice from Tampico as well!
