Unicorn Cookies Recipe With Rainbow Sprinkles

You will love this easy Unicorn Cookies recipe. It’s made with a cake mix and has homemade vanilla buttercream icing that you can make any color you want! Check out the full unicorn-themed party menu at the bottom.

If you haven’t noticed, the unicorn trend is very popular now. My neighbor makes cakes and has 3 unicorn birthday cakes scheduled for 1 weekend.

My little girl is 7, and for Christmas, she asked for everything that had unicorns on them, from pajamas, coloring books, t-shirts, and more!

I know that this summer, she will be asking for a unicorn party so I am doing some research now to prepare for her party. There are so many ways to add bright and fun unicorn colors to any party.

So it was fun when my daughter and I found a white cake mix and lots of sprinkles in our pantry to make these delicious unicorn cookies. They are just like a sandwich cookie or whoopie pie cookie with lots of color, lots of flavors and lots of fun. They are a fluffy version of unicorn sugar cookies.

 

 

I love cake mix cookies. It just makes it so much easier when you start with a cake mix. (Like my strawberry kiss cookies with a strawberry cake mix.)

These rainbow cookies only need ingredients, food coloring and lots of sprinkles! They are great for birthday parties for a unicorn lover or just a fun afternoon of baking.

Unicorn Cookie Cake Ingredients:

  • 1 white cake mix (only the cake mix – ignore the directions on the back)
  • ½ cup of butter (softened)
  • 1 3.4 oz package of vanilla pudding
  • 1 tablespoon milk
  • 1 egg
  • 2 oz bottle of Nonpareil sprinkles (about 1/3 cup)

Unicorn Vanilla Buttercream Icing:

  • 1 stick of softened butter
  • 2 ¾ cups powdered sugar 
  • 1 teaspoon vanilla extract
  • 3-4 teaspoon of milk 
  • Different colors of food coloring gel
  • 3 sandwich baggies

 

Instructions: For the Unicorn Cookies

 

Preheat oven to 350*. Line 2 cookie sheets with parchment paper and set aside. (I like to bake 1 at a time, and this way, you have all the cookie dough ready!)

Combine all the ingredients, except the sprinkles in a large mixing bowl. (It’s best in a stand up mixer but you can also mix it by hand.) Once the batter is well combined, add the sprinkles and mix by hand until they are incorporated.

 

 

Drop 1-inch balls (medium cookie scoop) onto the parchment paper. Then press to flatten a little bit. Bake in a preheated oven for 7 minutes. Do not overbake. Let cool for a minute, and then transfer to a cooling rack. Let cool completely before you frost the cookies.

 

 

Instructions for the Unicorn Buttercream Icing:

With a mixer – mix the butter for about 2 minutes until it is light and fluffy. Add 1 cup of powdered sugar, vanilla, and milk. Mix well. Slowly add the remaining powdered sugar. If it feels really stiff, you can add a little more milk.

 

 

Divide the batter into 3 bowls. Add a few drops of the color to each bowl. I like the fluorescent gel color. But you can make them any color you want.

 

 

Put a sandwich baggie into a small narrow cup, pushing the point into the bottom of the cup. Scoop the colored icing into the baggie. Seal the baggie at the top and then snip a small opening in the corner. Push the frosting into the hole. (Repeat with the 3 colors.)

 

 

Grab a unicorn cookie and swirl the icing on the flat side of the cookie. Top with another unicorn cookie. Alternate the colors on each colorful cookie.

Serve and enjoy! Makes about 18 sandwich cookies.

can i use cookie mix instead i cant seem to find any cake mix in my country
