In 2014 I want to spend less time in the kitchen and more time with my family. So the best way for me to do that is with Crock Pot meals. They are so easy and save me so much time. I can prep the meal in the morning and then there aren’t so many dishes to wash after dinner.

I asked my blogging friends to share with me their favorite Crock Pot recipes. I hope to bring you a variety of recipes that your family will enjoy. I will even have some vegetarian and gluten free recipes to share with you!

If you have been following my blog, you know that I love my crock pot. I have been using it about 3 times per week. I am a stay at home mom – but I am busy. I have 3 kids and I home school my 2 boys. When we take our lunch break, I can usually throw the ingredients in the crock pot so I know dinner is done.

This also helps when we have things to do after school. There have been so many times that we have left the house and came home to a delicious dinner. If I didn’t have dinner in the crock pot , I would have been tempted to go out to eat. Having dinner ready is a lot healthier and cheeper than giving into the temptation of eating out.

You all know I love my crock pot. I use it at least 4 times a week. It helps me stick to my meal plan and saves me a ton of money every month. I am not tempted to go out to eat because dinner is already made in the crock pot. Cooking meals in my crock pot is healthier and I usually make less mess in the kitchen. (That makes my husband happy since he’s the one that does the dishes.)

Another wonderful thing about your crock pot is that it doesn’t heat up your house! During the summer you don’t want to heat up your house by using the oven to make dinner. With your crock pot you get a delicious home cooked meal without heating up your house.

Nor do you want to have to come home from a day of fun with your family and cook dinner. The crock pot really is one of my favorite inventions!

I have finally completed 20 different meals you can quickly prepare and put in the freezer. When you are ready to cook them you just throw them in the crock pot that morning. It has really helped make dinner time so much easier in my house! I don’t have to stress about what’s for dinner. I can just open the freezer and pick out a meal.

I love to create quick and easy crock pot meals. They are especially nice during the summer time. I can spend more time hanging out with my family and I don’t have to worry about heating up my house when I make dinner. When I sit down to make my meal plan, I base it on the sales and the printable coupons that are available.

We have been visiting our family in Florida for a few weeks. My sister has been kind enough to put up with our craziness for over a month now. I don’t mind making dinner, but I have been having a hard time finding recipes that are kids friendly, budget friendly, and a meal that feeds a crowd. (There are 4 adults, 1 teenager, and 5 kids 9 and under.) This meal does it all. Serve this meal with a side salad and it’s a filling meal for everyone. This will become a recipe that goes on my master meal list!

Now that Walmart price matches so many stores in my area, I can save so much more. Plus, I save more with coupons and dinner is cheap! For a limited time there are printable coupons for Kraft Summer essentials products. Besides the coupons I used to make the main meal, I saved 75¢ on  KRAFT Natural Shredded Cheese for the salad and 50¢ on KOOL-AID Jammers Juice Drink (10-pack) for the kids. We also picked up some Velveeta Shells and Cheese for a quick lunch for the kids.

I printed most of the coupons that are available because these are products I use all the time and I love to save money! Printable coupons can disappear when they reach their print limit, so when I see a coupon I may use, I print it immediately.

  • 2 pounds boneless, skinless chicken
  • 1 cup KRAFT  Peppercorn Ranch Salad Dressing
  • 1/2 cup water
  • 2 large garlic cloves, minced
  • 4 oz Philadelphia Cream Cheese
  • 3 slices of OSCAR MAYER Butcher Cut Bacon
  • 16 ounce box of thin spaghetti

If you still haven’t tried out my crock pot series – you are spending too much time in the kitchen! I now have 35 recipes that are published. This past week I went out of town with my daughter and my husband stayed home with our boys. I put together 5 new meals so that they would have dinners while I was gone. They were a huge hit!

Each set of recipes includes a printable shopping list and a printable recipe list.

While I was visiting my sister (who has a very busy schedule) I helped her put together the latest set of  recipes.  She couldn’t believe how easy it was. Her family isn’t often together for dinner time so she loved that when they came home there was food ready for them to eat!

No Oven Pizza

I think I have complained before about my oven It’s a gas oven and  I’m lucky if it will get to 250*. When I get the gas filled it may get to 300* but it doesn’t last very long.

I love to bake – so this is very frustrating for me. (I have a call in to finally get it fixed!) To make matters worse I had an electric convection oven that I would bake most things in (that I could fit) and it died the other day. So I have not been able to bake much.

We love pizza and the other day I had made English Muffins using my cast iron skillet. I was surprised how great they tasted and that they cooked all the way inside. So I thought – why no try to make a pizza in the cast iron skillet?

I was very happy with the way it turned out. It had the flavor of a brick oven pizza. The only thing I would have liked is if I could have put it under a broiler to brown the cheese. It was hot and melted – so it still tasted great!

First you need to make or buy some dough. Here is my favorite bread machine pizza dough recipe. You just throw all the ingredients in your bread machine and it’s done. Super cheap and very good! (I may substitute 1 teaspoon of garlic salt for the salt next time.)

Once it is done you should be able to separate it into 4 or 5 small balls. Flour the work area and roll them out to about the size of your cast iron skillet.

Put them on a cookie sheet with cornmeal (or flour like I did because I didn’t have cornmeal) and let them rise in a warm spot for about 25 minutes.

Pre-heat your cast iron skillet. Add your pizza dough. Cook for about 4 minutes and then flip.

Add your sauce, cheese, and toppings and let it cook for another 4-5 minutes. I put a lid on it to help melt the cheese – but I left the lid propped up on the side to make sure the condensation didn’t drip on the pizza. If you have a broiler – you can put it under the broiler until the cheese is melted. I like it to be a little brown.

So that is it! It’s super easy and tastes awesome. The cast iron gives it a great taste that you don’t get from cooking it in your oven.

10 Chicken Crock Pot Freezer Recipes + Shopping List

Since my sister and my mom will be sharing 40 pounds of chicken next week from Zaycon chicken, I thought I would create an easy way for her to prepare the chicken for dinner.

I love to make crock pot freezer meals. I throw all the ingredients into a freezer bag and dinner is prepared! All I need to do is dump it into the crock pot and….that’s it! Well sometimes I need to make side dishes but the hard part is done. Plus there isn’t much of a mess to clean up!

Basically you spend 1 hour in the kitchen and you will have prepared 5 dinners. You made 1 mess and already cleaned it up! There are 35 Crock Pot Freezer Recipes! This is a great way to have dinner on the table during the start of the school year!

So here are 10 chicken recipes that you can prepare and freeze. It’s ok if you don’t have all the ingredients when you prepare the bags, just add it to your shopping list and write it on the bag to add it when you prepare the meal.

You can even double the recipes and have 20 dinners already prepared in your freezer!

Getting started:

  1. Print your Shopping List
  2. Print your recipes
  3. Lay out all your freezer bags and label them with instructions and additional ingredients you need.
  4. Cut all the produce and add them to the bags that need them. (I love this because I don’t waste anything. I chop everything and add it to the bags!)
  5. Add the additional ingredients and freeze!
  6. Clean your kitchen and know that you will not have to clean up another dinner mess for a while!

 

Hawiian Chicken

Crock Pot Hawaiian Chicken

(4-5 servings)

  • 2-3 large boneless/skinless chicken breasts
  • ½  cup white sugar
  • ½  cup vinegar
  • 3 garlic cloves, minced
  • 2 Tablespoons soy sauce
  • ½   cup of pineapple juice (use what’s in the can)
  • ½  can of large pineapple chunks

Add all the ingredients to the bag.

Write on the bag:

Cook 4-5 hours on high or 6-7 hours on low. Serve it over rice and enjoy.

While I am cooking the rice I  like to shred the chicken and put it back in the juice before I serve it.

Chocolate Chip Peanut Butter Mug Cake

Most nights I need my chocolate fix. I don’t want to make a whole cake or a batch of cookies just to eat chocolate. I have tried so many mug cakes and they are all so dense. They taste ok, but they leave me feeling like I have lump in my stomach. This chocolate chip, peanut butter mug cake recipe is very fluffy and delicious.

My boys loved it and cleaned the mug. The good thing is you can also cook this in any type of microwave safe container. I make it in a large mug and a bowl and they both were perfect. Even better you prep and bake in the same container – so less mess!

Chocolate Chip Peanut Butter Mug Cake

Ingredients:

  • 3 Tablespoons flour
  • 1 ½ Tablespoons cocoa powder
  • 2 Tablespoons sugar
  • ¼ teaspoon baking powder
  • pinch of salt
  • 1 ½ Tablespoons vegetable oil
  • 3 tablespoons milk
  • 1 heaping Tablespoon peanut butter 
  • Chocolate Chips

Instructions

  1. Spray your mug or bowl with cooking spray. Whisk together the dry ingredients
  2.  Then add the oil, milk, and peanut butter. Whisk until smooth.
  3. Top it off with a handful of chocolate chips and microwave on high for 1 minute and 5 seconds.  (If it doesn’t seem cooked cook for 10 seconds at a time – you don’t want to over cook it!)

It is going to puff up so make sure you use a big enough container. You will want to eat it right away! Top with ice cream or whipped topping.
