New Recipes

This week I went to Publix and I was able to buy 2 weeks worth of groceries for just $106! I saved $97! I got all the meat I needed and we will even eat some NY Strip steaks this week :) Here are the recipes I have used with stuff I got on sale at Publix.

Fajita Veggies over Chicken

• 2 peppers any color (Bag of 6 $2.99 = $1)
• 1 onion
• 2 cloves garlic
• 2 1/2 c. tortilla chips – almost fill a ziploc bag (from my pantry)
• 1 – 2 lb. boneless, skinless chicken breasts ($2.99/lb)
• 1 Package of taco seasoning
• 2 Tbsp. butter
• 1 Tbsp. olive oil

  • Cut up peppers and onion.
  • Mince garlic into small pieces.
  • Put tortilla chips in a plastic bag and smash with a rolling pin. Add about 1/2 the package of taco seasoning to the bag.
  • Put the chicken breasts in a plastic bag and pound it until it’s thin with a rolling pin or meat mallet.
  • Press crushed tortilla chips onto both sides of the chicken. Place chicken on a baking sheet and drizzle melted butter on top.
  • Bake at 350 degrees for about 15-20 minutes, until fully cooked.
  • While the chicken is baking, heat the olive oil in a skillet. Add the sliced onions and peppers and cook over low heat for about 5 minutes. Add the garlic and remaining 2 taco seasoning.
  • Cook for a few more minutes. I like the peppers to be soft so I cook them for a while.
  • Serve with the baked chicken. We added some sour cream and cheese to go on top of our food. We mixed everything together.

Our 5 and 2 year old really like this dinner. I served it with cilantro-lime rice.

I found this awesome website, Skinny Taste. She has a lot of very healthy, easy recipes. I found a recipe for Turkey Picadillo. It was so good. Here’s the original recipe. Below is how I prepared it.

Turkey Picadillo
1.25 lb 93% lean ground turkey
8 oz tomato sauce
1 tsp ground cumin
1 Tbsp capers
small onion, finely chopped
2 cloves minced garlic
1/2 bell pepper, finely chopped
2 Tbsp cilantro

  • Brown the ground turkey on medium heat in large pan. Break the meat up into small pieces.
  • Add the onion, garlic, pepper, and cilantro. Cook for a few minutes.
  • Add capers and cumin. Mix well.
  • Add tomato sauce and about 1/4 cup of water and mix.
  • Reduce heat to low and simmer covered about 15 minutes.

We ate the meat mixture alone or you can put it in a corn tortilla. It was suggested that this would be a great stuffed pepper recipe. I served this will the left over cilantro lime rice and a salad. My kids also love this meal. If you are trying to find a good recipe for ground turkey, I think this is a great recipe to try.

I was able to stock up on a lot of canned tomato products and canned veggies at Publix this week. You don’t even need to have a bunch of coupons. They have coupons in the store or you can print them. They have $1 off 4 cans of Green Giant veggies. They are $1.29 for 2 cans. With the $1/4 coupon you will pay just $1.58 for 4 cans!!
