Basic Cookie Recipe

I love to make cut out cookies with my kids – but I have  never found a good recipe…until now! After searching many websites I found a basic cookie dough recipe but it was too much cookie dough for me, so I cut it in half. It still made a ton of cookies! Here’s the scaled down version I used.

Basic Cookie Recipe

  • 1-1/4 cups butter, softened (2 – 1/2 sticks)
  • 1 cups sugar
  • 1 egg
  • 1/8 cup milk (2 TBSP)
  • 1 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Directions

  1. In a large bowl, cream butter and sugar. Add the egg, milk and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to creamed mixture, beating just until mixed
  2. Divide into 2 balls and wrap in plastic wrap for at least 2 hours. (I only had wax paper and it worked too.)
  3. When you are ready to use it, flour your work space and the rolling pin. Roll out dough to 1/4-in. thickness. Cut into shapes. .
  4. Bake at 375° for 8-10 minutes or until the edges are golden brown. Place on a wire rack to cool. Frost plain cookies or sprinkle with colored sugar.

We sprinkled some of the cookies with sprinkles before we baked them.

My Family Stuffing Recipe

Stuffing is a huge part of my Thanksgiving plate! I love that my familys’ recipes are so easy and flavorful! They may sound a little weird – but they are simple and delicious!

Sausage Stuffing

  • 1 1lb roll of Jimmy Dean regular sausage
  • 1 14oz package Herb Seasoned (blue bag) Pepperidge Farm Stuffing

Cook up it the sausage. Then follow the instructions on the back of the Pepperidge Farm Stuffing bag.

Oatmeal stuffing
Melt 1 stick of butter in a saucepan. Chop up 1 onion and sautee in the butter. Add salt and pepper to taste. Add enough oatmeal to soak up the liquids.

Stuff the sausage stuffing in the neck and the oatmeal in the rear.

My Christmas Baking Day

We did a little baking on Wednesday and we are doing the rest of it today. Here’s some of the recipes I will be using. I hope your family has a very Merry Christmas! Please share your favorite recipes with me. I love to bake and I am always looking for new stuff to try!

Plus we have a gingerbread house to decorate. We got it at Costco and we just need to do the decorating :)

Updated Crock Pot Hawaiian Chicken

A few months ago I made a recipe in my crock pot for Hawaiian Chicken. I don’t really have a lot of good chicken recipes for my crock pot, so I was happy this was such a great recipe. I did modifiy it a little bit to make it with less sugar and I think it tastes just as good. So here’s my new recipe. If you have any good crock pot chicken recipes – please share them with me!

Crock Pot Hawaiian Chicken

  • 2-3 large chicken breasts (You could also probably use thighs)
  • 1/2 cup white sugar
  • 1/2 cup vinegar (I know it’s weird but it works)
  • 3 garlic cloves, chopped
  • 2 Tablespoons soy sauce
  • 1/2  cup of pineapple juice (use what’s in the can)
  • 1/2 can of large pineapple chunks

Put the chicken in the crock pot. Mix all the ingredients in a bowl and pour over the chicken. I cooked it on high for an hour and on low for 3 hours. Serve it over rice and enjoy. I also like to shred the chicken and put it back in the juice before I serve it. I have been using 3 large frozen chicken breasts for this recipe and it’s done in 3 hours on high. So if you forget to take something out for dinner – pop this in your crock pot!

We have eaten this with rice and mashed potatoes and they are both great combinations!

High Altitude White Chocolate Oatmeal Cookies

I love to bake but find it very frustrating to bake at a high altitude. Many times it’s frustrating becasue I end up wasting money on the ingredients. When I came across this recipe for White Chocolate Oatmeal Cookies, I knew I had to try them. So I asked the author what she would do different at a high altitude. Here’s the results and they were delicious!

High Altitude White Chocolate Cookies

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 heaping teaspoons vanilla
  • 3 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups old-fashioned oats
  • 1 cups white chocolate chips
  • Directions:

Preheat oven to 350°F. Cream together the butter and sugars until smooth, then beat in eggs and vanilla. Add the flour, baking powder, baking soda, and salt, and mix. Stir in the oats and white chocolate chips by hand, then drop dough in golf ball-size portions onto ungreased cookie sheets. I have a wonderful cookie scooperI bought last year on Amazon and it makes the perfect cookie! Bake in preheated oven 12-13 minutes. They looked a little gooey on top but they were perfect.

Makes 4 1/2 dozen cookies.

This will be part of our Christmas cookies this year!
