Using Leftovers

We did not eat leftovers very often when we were growing up. This is probably why I am not a big fan of them now but I am trying to make sure we don’t let our food go to waste! I wanted to show you how I use some of my leftovers!

You ever have leftover spaghetti? Use it for Yakatori Noodle Bowls. Living at 7500 feet making the spaghetti takes a long time so having the spaghetti already made makes this a super fast meal! I usually take a big bowl and put some water in it. I put it in the microwave for 5 minutes. I put the cooked spaghetti in a strainer and pour the hot water over it. This is a great way to recycle the spaghetti because it is a whole new flavor!

Using leftover white rice. This has become one of our favorite things to whip up. I make it more for lunch but it could be a great meal, especially if you have some leftover meat to add to this dish. You can customize this recipe to the stuff you like to eat.
Fried Rice
1/2 onion diced
2-3 garlic cloves minced
1 zucchini diced
2 TBSP butter
2 eggs scrambled
2 TBSP soy sauce
2 cups cooked rice (chilled and atleast a day old)
optional – leftover meat or shrimp
Sautee the onions, garlic, and zucchini (and any other veggies you like or have around) in the butter for about 5 minutes til soft.
Push the stuff to the side and cook the scrambled eggs.
Mix together the veggies, soy sauce, rice, and meat.
Heat thoroughly and eat!
I also LOVE to pour this Yummy Yummy Sauce over it!

100_7440 Have you made chicken fajitas and had leftover meat, peppers, and onions? Try making Chicken Fajita Quesadillas! These are so good! Here is how I make them:

Chicken Fajita Quesadillas
~Just take a small frying pan an add some oil (the first one seems to be the greasiest but they taste good).
~Take a flour tortilla and add some cheese. We had a Cheddar-Monterrey Jack blend. This is like the glue to hold the quesadilla together.
~Add the leftover fajita mixture.

~tortilla
~Cook for a few minutes over med-high heat. You made need to add some more oil as you make more.
~I scoop it up with a spatula and flip it on to my hand and then lay it back in the pan.
~Cook for a few more minutes and serve!
This is good if you dip it in sour cream. (We use creama here and it is DELICIOUS! You may be able to find it in the Mexican dairy section of your store.)
