These past few days I have been sick, sick enough to go to bed early and nap when the baby naps. I haven’t been this sick in a while. Luckily I have an awesome husband that has been taking care of the kids and cleaning up the house! Since I have not been cooking too much I wanted to share one of our favorite recipes. It is Ultimate Chicken Fingers. It is simple, quick, and delicious! If you have never tried it, I highly recommend it!
Ultimate Chicken Strips
* 3 boneless skinless chicken breast halves (cut into 1/2 inch strips)
* 2/3 cup Bisquick baking mix
* 1/2 cup grated Parmesan cheese
* 1/2 teaspoon garlic salt
* 1/2 teaspoon paprika
* 1 egg, slightly beaten
* 3 tablespoons butter or margarine, melted
Instructions:
Heat oven to 450 degrees.
Line a cookie sheet with foil; spray with cooking spray. (very important to do this! you dont want the yummy coating to stay on the cookie sheet!
In a plastic resealable bag, mix Bisquick mix, cheese, garlic, and paprika. (I just put it in a shallow bowl so I don’t waste a Ziploc bag.)
Dip half the chicken strips in egg; place in bag of Bisquick mixture. Seal bag and shake to coat.
Place chicken on cookie sheet.
Repeat using remaining chicken.
Drizzle butter over chicken.
Bake for 12-14 minutes, turning halfway through bake time.
