I don’t have the advantage of looking at ads and matching my coupons to get the best deals on groceries. Most stuff here in Mexico is always the same price. Very rarely is there a good sale. Right now they have a sale at one of our stores that is buy 2 get 1 free. We also have to go to Walmart, Costco, Sam’s Club, and Comercial Mexicana to get everything we need. So, we try to go shopping for about 2 weeks worth of stuff. I don’t have a lot of storage space, so that hinders us a little. I really wish I had sales, because it would help me to be a little bit more creative.
Here’s my plan:
Breakfast
- Bagels (if I can find them)
- cereal
- Pancakes from batch cooking
- eggs
Lunch
- PB&J sandwiches
- Turkey & cheese sandwiches
- leftovers (click here to see how I turn my leftovers into a new dish)
- salad
- quesadillas
Dinners (I plan out 10 and get everything I need when we go shopping. They are also not in order.)
- Chicken Divan
- Calzones (Im gonna use this dough recipe)
- Chicken Parmesan with spaghetti
- Chipotle Burritos w/ cilantro lime rice
- Steak & veggies (stir-fry) w/ rice
- Beef & broccoli w/rice
- Chicken fajitas w/ mac & cheese (I just use red and yellow pepper w/ onions. I sprinkle with cumin, s&p to taste. Serve w/ tortillas, cream, cheese, & lime juice.)
- Yakatori noodle bowls
- Crock Pot Chicken Rotisserie w/ potatoes and carrots
- Cornbread casserole
I will also be making a batch of spaghetti sauce to freeze these awesome rolls!
