Creamy Lemon Chicken {Skillet Meal}

You would think that because I work from home I would have an elaborate meal on the table every night. Well, that hardly ever happens. Most days it is 5pm before I know it and the kids are starving. So I have a few meals on my menu that are quick and easy to pull together and they use ingredients I usually have in the house. I love Perdue Perfect Portions because there are 5 individually wrapped pieces of chicken. They aren’t frozen so I don’t have to worry about defrosting them. And they are the same thickness and I don’t have to waste time pounding them down with a mallet. Plus they NEVER treat their chicken with antibiotics. That’s important to my family! chicken 1 This is one of my favorite meals. I love foods that have a sauce. I love to pour it over my side items and dip my chicken. Your whole family will love this meal and you can have it on the table in about 35 minutes. We had it with a salad with my grandma’s secret oil and vinegar recipe. (One day I will share because it’s so good my 10 year old will eat a whole bag of salad with this dressing!)

Creamy Lemon Chicken {Skillet Meal}

  • 4-5 Perdue Perfect Portions boneless skinless chicken breasts
  • salt and pepper
  • 1 cup chicken broth
  • 1 heaping tablespoon minced garlic
  • 3 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • ⅓ cup diced shallots (you could also use yellow onions)
  • 2 Tablespoons salted butter
  • ¼ cup heavy cream
  • Optional lemons for garnish

Instructions:

  1. Pre-heat the oven to 350*.
  2. Add some salt and pepper to both sides of the chicken breasts. In a small bowl mix the chicken broth, garlic, and lemon juice. Set aside.
  3. In an oven-proof skillet*, add the olive oil and heat over medium heat. Add the chicken and brown on both sides.
  4. You do not need to cook it completely because you will finish cooking it in the oven. Remove and put on a plate and set aside.
  5. Lower the heat to medium and add the chicken broth mixture and the diced shallots Gently stir removing any brown bits on the bottom of the pan. Let it simmer for about 8 minutes.
  6. Add the butter and stir it until it melts completely.
  7. Remove it from the stovetop and add the heavy cream, mix well.
  8. Add the chicken back into the pan and add some sauce to the top of the chicken.
  9. Bake it in the oven for about 8 minutes or until the chicken is completely cooked through.
  10. Top with lemon slices, if desired and enjoy!

*If you do not have an oven-proof skillet, you can put the chicken and the sauce in a 9×13 pan and cook according to the instructions.
