I love to bake! I would spend all day in the kitchen if I didn’t have to clean up my mess. I came across MyBakersBox.com. It’s a monthly subscription service that has products to inspire you to bake.
My Bakers Box was started with three girlfriends who have a passion for baking. It can be difficult to find unique baking supplies in local stores so they decided to create My Bakers Box. The March box contained some fun stuff and I was able to make a few mini loaves of Lemon Loaf. It tastes just like Starbucks. The box included lemon oil which is stronger than lemon extract or lemon juice. It gives your food a much deeper flavor.
It also had some mini loaf pans, cupcake liners, piping bags, and a recipe card. I love the variety of products in this box – it gives me lots of inspiration in the kitchen!
Now for the recipe! I used the lemon oil, loaf pans, and with the extra batter, I made a few cupcakes. My kids loved this! If you don’t have mini loaf pans you can also bake these in a large loaf pan.
Lemon Loaf
- 3 eggs
- 1 cup sugar
- 1 cup vanilla yogurt
- 1/2 cup canola oil
- 12 drops lemon oil
- 1 1/2 cup all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
Glaze
- 1 cup powdered sugar
- 1 tablespoons milk
- 4 drops lemon oil
Instructions:
- Preheat your oven to 350*. Use 6 mini loaf pans or 1 9×5 baking loaf pan. Grease and set aside.
- Combine the eggs, sugar, yogurt, oil and lemon oil. Mix for about 2 minutes until it’s well combined.
- Add the flour, baking powder and salt and mix until it’s just combined.
- Add to the baking pan. Bake the mini loaves for 18-20 minutes, muffins for 13-15 minutes, and a 9×5 loaf for 45-50 minutes.
- Let them cook for about 20 minutes. You want it to still be warm but not hot.
- Mix all the ingredients for the glaze together and pour over the lemon loaf. (Note – you can add more or less milk based on the consistency you desire.)
- Serve and enjoy!
