My mom loves being a grandma. It is so much easier to hangout with the grandkids for a few hours and send them home. Plus Grandma’s house always has the best cookies. I remember when I was little, I could always sneak in the kitchen and find some Keebler Fudge Stripe Cookies at my grandma’s house. I always knew when we visited Grandma we would eat egg salad and cookies!
Now that I have my own kids, I love to watch how excited they get when we visit my mom. We have never lived close to her, so we make the most of the time when we do get to visit for a few days. Just like when I visited my Grandma, my kids always go straight for the cookie spot in Grandma’s kitchen. They sit on her lap and talk about their day while dipping their cookies in milk. It’s fun to just sit back and watch them.
Keebler Cookies have always been a staple in our homes. They are usually in a lunch box or we munch on them while they share about their day at school. Keebler makes so many cookies that it is hard to pick just one that we love.
Every time we go to Kroger, they ask to get a package of cookies. (There is usually some cute negotiating since there make so many delicious varieties.)
I enjoy the Keebler Coconut Dreams Cookies. They are made with chewy caramel and coconut and are striped with delicious fudge. I wanted to make an easy dessert this weekend so I came up with these Coconut Dreams Cookie Bars. They really could not be any easier! You could literally throw them together in 5 minutes. Who doesn’t like a dessert recipe that is easy and delicious? You may even have most of the ingredients in your house already!
Coconut Dreams Cookie Bars
- ½ cup melted butter
- 1 ½ cups of graham cracker crumbs (8 graham crackers)
- 1 can of sweetened condensed milk
- ½ cup of butterscotch chips
- 1 cup if chocolate chips
- 8 Keebler Coconut Dreams Cookies, broken into pieces
Preheat your oven to 350*.
In a small bowl, melt butter and mix with the graham cracker crumbs.
Add it to an 11×7 pan and flatten along the bottom and up the sides.
Pour the sweetened condensed milk over the crumbs and then sprinkle the chocolate and butterscotch chips over it.
Top withe broken pieces of Coconut Dreams cookies.
Bake for 20-25 minutes. Cool completely before you serve these cookie bars.
The hardest part is waiting to eat these dream bars! Believe me, if you cut a small piece while it is still warm, it will all slide to the empty spot.
Makes 10-12 bars.
