I wanted to share a quick and easy recipe with you the includes many of the Simple Truth Products. It’s a double-duty, super easy meal that you can get on the table in less than 30 minutes. Plus it’s healthy! Doesn’t it sound perfect?

I call this a double duty meal because it uses Simple Truth Rotisserie Chicken you can pick it up in the deli. My kids beg for this. It’s always so juicy and delicious. They don’t like buffalo flavored stuff but, they do love this chicken. So with this chicken they can enjoy the meat with a salad and me and my husband can soak it in buffalo sauce and eat it on lettuce for lettuce wraps.

Buffalo Chicken Lettuce Wraps

• 1 Simple Truth Rotisserie Chicken
•  2 Simple Truth Carrots
• 1 stalk of Simple Truth Celery
• Several pieces of Simple Truth Romaine Lettuce
• ½ cup Simple Truth Organic Chicken Broth
• ½ cup of cayenne hot sauce (less if you don’t like it too spicy)
• Ranch Dressing

Instructions:

1. Remove the meat from the Rotisserie Chicken and set aside.
2. In a small sauce pan add the chicken, hot sauce, and chicken broth. Cook over medium heat. Let it simmer for 5 minutes.
3. While that is heating up, you can dice up the celery, shred the carrots, and cut off the pieces of romaine lettuce.
4. Once the hot sauce mixture is ready you are ready to assemble your Buffalo Chicken Lettuce Wraps! Place a small amount of Ranch dressing on the base of the lettuce. Add the chicken, celery, and carrots. (Make sure you drain off most of the buffalo sauce.)
