I have a good friend who is teaching me how to make Mexican meals. I am so happy that she bought over Chicken Tinga one night for dinner. She came over and taught me how to make this easy meal. It’s quick and easy and I really could eat it everyday if it was ok with my family. I also made it a few weeks ago when we had a birthday party for my son. It makes a lot of tostadas!
To make this more like they do in Mexico you will need to find Mexican Crema and Panela cheese. I was in Rapid City and found Mexican Creama so you should be able to find it in your local store near the sour cream. They also put re-fried beans on the bottom but we love creama!
