My kids love salsa - so this is my go to recipe whenever I have too many tomatoes in the fridge. It's not very spicy. It is more of a Pico De Gallo. But it is perfect with tortilla chips! This is a lot cheaper and healthier for your family than the store bought version. I always over-buy tomatoes, so this is a great way for me to use them.

Quick & Easy Salsa

  • 3 large tomatoes, chopped
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • Juice of 2 limes (about ¼ cup)
  • 1 Tablespoon cilantro
  • 1 teaspoon salt

Directions:

Mix them all together in a covered container. If you can let it sit for at leaf 12 hours - but my kids don't usually let me get it to the fridge before they want to eat it!

Tip - After I cut up the tomatoes I use a potato masher to smash up the tomatoes. My kids prefer the liquid part - so this helps the salsa to not be so chunky!
