For some reason I love rice bowls from Chipotle and Moes. They are just so satisfying. I love the combination of the rice, meat, cheese, pico de gallo, cream, lettuce, and avocados. But it can get expensive to eat these with my family at the restaurant. I am always trying to re-create it and I think I finally did it! I decided to go simple and it totally worked. I never eat leftover chicken but I had this for lunch today and I plan of eating it again tomorrow.
This recipes is for a Chicken Rice Bowl but I really want to find a version to make with beef. (If you have a suggestion – please share. We don’t have a grill and I am not sure what pan to use on the stove top to get that grilled flavor.)

This is a very simple and quick meal. You could have it on the table in about 20 minutes! These are my favorite types of dinner. I can also control the amount of calories and fat by adjusting the cream and cheese. I feel this is a pretty health meal and it tastes great!
My kids love to eat everything in tortillas – so this is also a great way to make some quick easy chicken tacos.
