No Bake Peanut Butter Granola Bars

 

 

 

Speaking of snacks, I wanted to share an easy, no-bake granola bar recipe with you. My kids come home from school and they are starving! I don’t want them to load up on sugary snacks and I don’t want them to eat too much because they will not eat dinner. So I throw together these No-Bake Peanut Butter Granola Bars. You can make them in less than 10 minutes! (But they need about 30 minutes to harden.)

No Bake Peanut Butter Granola Bars

  • ½ cup peanut butter (crunchy would be yummy too)
  • ½ cup honey
  • 2¼ cups quick oats
  • 1½ cups crisp rice cereal
  • dash of salt
  • 1/4 cup chocolate chips
  • ½ tsp. coconut oil
  1. Line an 8×8 baking pan and set aside. (This will make it easier to cut into bars.)
  2. In a medium bowl, mix the peanut butter and honey. Microwave the mixture for about 30 seconds and mix well.
  3. Add in the quick oats, salt, and crispy cereal and mix until it is well combined.
  4. Put the mixture into the 8×8 pan. Flatten it with a piece of parchment paper.
  5. Refrigerate for one hour or freeze for 30 minutes. Remove from the fridge and cut into 10 bars.

If you want the bars to stay hard you can refrigerate them.
