Speaking of snacks, I wanted to share an easy, no-bake granola bar recipe with you. My kids come home from school and they are starving! I don’t want them to load up on sugary snacks and I don’t want them to eat too much because they will not eat dinner. So I throw together these No-Bake Peanut Butter Granola Bars. You can make them in less than 10 minutes! (But they need about 30 minutes to harden.)
No Bake Peanut Butter Granola Bars
- ½ cup peanut butter (crunchy would be yummy too)
- ½ cup honey
- 2¼ cups quick oats
- 1½ cups crisp rice cereal
- dash of salt
- 1/4 cup chocolate chips
- ½ tsp. coconut oil
- Line an 8×8 baking pan and set aside. (This will make it easier to cut into bars.)
- In a medium bowl, mix the peanut butter and honey. Microwave the mixture for about 30 seconds and mix well.
- Add in the quick oats, salt, and crispy cereal and mix until it is well combined.
- Put the mixture into the 8×8 pan. Flatten it with a piece of parchment paper.
- Refrigerate for one hour or freeze for 30 minutes. Remove from the fridge and cut into 10 bars.
If you want the bars to stay hard you can refrigerate them.
