Jelly Bean cookies
Around Easter time, we have a ton of jelly beans on our house. I have a fun way for you to use some of those jelly beans in a cookie recipe. Make sure you save a few to share at Easter dinner!

Jelly Bean Cookies

Ingredients
  • 1/2 cup butter or margarine, softened
  • 1/3 cup white sugar
  • 1/3 cup light brown sugar
  • 1 egg, beaten
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup oatmeal
  • 1 cup jelly beans (small or cut up large ones)
Directions
  1. Preheat oven to 350 degrees F
  2. Cream together butter and both sugars with mixer.
  3. Add egg, baking soda, baking powder, salt and vanilla. Mix until combined.
  4. Stir in the flour and oatmeal and add in the jelly beans. Mix well.
  5. Drop rounded spoonfuls of batter 2 inches apart on a parchment lined cookie sheet.
  6. Bake for 10 to 12 minutes.
  7. Serve (Makes about 2 1/2 dozen cookies)
