Better Than Take Out - Beef & Broccoli

One of my favorite go-to meals is Beef & Broccoli. It's so easy to throw together and I really love meals that have the broccoli already included in the meal. My kids eat more broccoli than beef. I have been playing with some recipes and I saw that some people marinade the meat. So I tried it and it is awesome! It adds so much more flavor.

Beef & Broccoli

First you will marinade the meat for about an hour.

  • ¼ teaspoon baking soda
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon low-sodium soy sauce
  • 1 - 1 ½ lbs flank steak, sliced into thin strips

Mix all the ingredients together and marinade the meat in the refrigerator for about an hour. (I admit I don't often let it sit for an hour.)

  • 1 bag of frozen broccoli heads
  • ½ white onion sliced
  • 3 large garlic cloves
  • 1-2 tablespoon oil
  • ⅓ cup soy sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. When you start preparing to cook the meal, boil the broccoli.
  2. Mix together the soy sauce, brown sugar, cornstarch and water. Set aside.
  3. In a large frying pan heat the oil and add the garlic, onion, and meat. Cook until the meat is no longer pink.
  4. Add the soy sauce mixture and bring to a boil.
  5. Drain and add the broccoli. (I usually let the broccoli come to a boil. I like it to have a little crunch to it.)
  6. Serve over rice.
