No Bake Cookie Bars

I make a lot of granola but I didn't realize that you should not buy quick oats to make granola. It tastes fine but I don't like the texture because the quick oats are a little bit smaller. Unfortunately, I realized this after I bought the giant, double-pack of oats from Costco.

So on my search to figure out how I can use the oats, I realized that I could make no bake cookies. But I didn't feel like "dropping" them. So I decided to make cookie bars. They came out great! They were very easy to make and I never had to turn on my oven and heat up the house! This is the perfect treat for summertime.

These are kind of like fake out brownies. They would be perfect for any occasion. I made them for a Father's Day treat.

No Bake Cookie Bars

  • 2 cups sugar

  • 1 cup butter

  • ½ cup milk

  • 4 tablespoons cocoa

  • 1 teaspoon vanilla extract

  • 3 ½  cups quick oats (not old fashioned)

  • ⅔ cup peanut butter

  • 1 cup chocolate chips

  • M&M's optional

 

Instructions

  1. Combine the sugar, butter, milk, and cocoa in a medium sauce pan.

  2. Bring to a boil and boil for 1 minute.

  3. Remove from the heat and  add vanilla, oats, peanut butter, and chocolate chips.

  4. Pour onto a greased 9x13 for thicker bars or a greased small cookie sheet for thinner bars. (This is where you would press down M&M on the bars if you want M&M's on your bars.)

  5. When they have set (but not completely cooled) cut into bars.
