Homemade Waffle Recipe

My family loves pancakes, so we eat them a lot. So I really wanted roc change it up a little bit. I asked my kids if they wanted pancakes or waffles for breakfast and I was surprised that all 3 kids yelled waffles! I really can’t remember the last time I made them. So I grabbed my recipe book and found my waffle recipe.

They are really fluffy and I like to cook them so they have a little crunch. My kids ate a bunch and I had some left over to freeze. I plan on buying some ice cream this week at the store because I think they would be delicious with some ice cream and chocolate syrup!

Waffles

Ingredients

  • 1 ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 cup whole milk or buttermilk (see substitution below)
  • ½ cup vegetable oil
  • 2 eggs
  • 1 Tablespoon sugar
  • 1 ½ teaspoon vanilla extract
  • Your favorite syrup and butter

Directions

  1. In a large bowl, combine the flour, cornstarch, salt, baking powder, and baking soda and mix well.
  2. Add the milk, vegetable oil, eggs, sugar and vanilla and mix well.
  3. Set the batter aside for 15 minutes.
  4. Preheat a waffle iron. I have a Cuisinart waffle maker and I like to set it on level 4. Follow the instructions on your waffle maker for best results.
  5. Serve with syrup and butter.

Makes about 10-12 waffles.

Buttermilk Substitution – For this recipe add 2 Tablespoons of lemon juice or white vinegar and fill up the remaining 2 cups with your milk. Let it sit for about 3 minutes.
