I have been trying to find a quick and easy marinade for chicken. I have tried many that just don’t have a lot of flavor. I think that part of making sure the meat is tender and soaks in all the flavor is to flatten the chicken breasts. This will also help them to cook a little faster and not get dried out.
Garlic Lemon Chicken Marinade
- 2 pounds of boneless chicken breasts (or other chicken parts)
- ½ cup olive oil
- 1 Tablespoon Dijon mustard
- 6 large garlic cloves, minced
- juice of 2 lemons + zest
- 1 teaspoon sea salt
- ½ teaspoon black pepper
In a bowl, whisk together all the ingredients. Add the chicken to the bowl and marinade for at least 2 hours in the refrigerator.
Remove and discard the marinade. I used my George Foreman grill to make this chicken. I really wanted to grill but it was raining outside. It was really delicious. We also made steaks and my family preferred the chicken. We ate every single piece of it!
