No bake energy bites

 

Here’s another recipe that cam from cleaning out the pantry! We have a really loooooong road trip planned, so I am trying to make some recipes that we can take on our trip. This is a really simple recipe. You can change up the recipe to your liking!

I think this is going to be a great snack that we can take with us. It has a nice combination of salty and sweet. Plus it is filling. It could be a little messy – so make sure you have a few wipes handy.

No Bake Energy Bites

  • 1 cup old fashion oats
  • ½  cup rice krispies
  • ½  cup peanut butter
  • ½  cup mini chocolate chips
  • ⅓  cup honey
  • 1 teaspoon vanilla extract

Mix together all the ingredients. If you have a cookie scooper, scoop them onto a cookie sheet and put in the refrigerator for about 30 minutes to chill. If you don’t have a scooper, chill the dough for 30 minutes and then scoop into balls.

Store in a container and they should last for about a week  – but they don’t don’t last that long in my house!

The wonderful thing about this recipe is that you can change out so many things to your liking. Use different types of chips maybe add some flax seed, wheat germ, or coconut.
