Fluffy CreamCheese Icing
About once a week I will make something for dessert. My son had asked if we could get a Red Velvet cake and of course I said yes! Who doesn't love Red Velvet cake? We finished up homeschool early the other day and it was also the same day as a friends wedding anniversary. I decided to make a cake  to share it with her.

I don't really like to use canned frosting - it's almost too oily and heavy for me. And you always have to have cream cheese frosting on your Red Velvet Cake. So I added cream cheese to this simple icing recipe. It was so light and fluffy and had just enough cream cheese taste to not be over powering. I am sure this will also be excellent on a carrot cake.

While I would love to make my cakes from scratch, they never seem to work for me. So I will stick with a box until I can get the perfect recipe!

Fluffy Cream Cheese Icing

  • ½ cup (1 stick) unsalted butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 3 ¾ cup confectioners' sugar
  •  1 teaspoon vanilla extract
  1. Win an electric mixer, in a large bowl, cream together the butter and cream cheese for about a minute.
  2. Add the powered sugar to the bowl about 1 cup at a time, scraping the side. Mix for about a minute after each cup of sugar you add.
  3. Add vanilla extract and mix until combined. Spread it over your favorite cake and cup cakes. This makes enough for a 9x13 cake with some left overs.

Serve and enjoy!

It really was delicious. My son was really licking his plate to make sure he didn't miss any of the icing on his plate. This is a recipe that will impressive anyone! Enjoy!

  1. Your frosting looks terrific. I have to admit I am a frosting FAIL and rarely make it myself mine comes out of a frosting container. I like cream cheese though so this might be enough to inspire me. I didnt realize the ingredients were so simple.
