I love casseroles. They are really easy to throw together. They usually feed a lot of people and have lots of great flavors. My friend use to make a Chicken and stuffing recipe that I loved! I didn’t have the same ingredients she used so I did my best to re-create the recipe. We liked it. She used Swiss cheese instead of Mozzarella – so you can use whatever you have in the house.
This is also really quick to throw together. You can prep it, cook it, and serve it in less than 45 minutes! I also like that I can get the kitchen cleaned up while the dinner cooks! Serve with your favorite veggie or a salad and you have a complete meal!
Chicken and Stuffing Casserole
- 1 1/2 pound boneless, skinless chicken breasts
- 1 10 oz can cream of mushroom soup (or make your own soup)
- 1/2 cup sour cream
- 4 cups prepared Peperidge Farm Stuffing (or 2 boxes of stove top)
- 2 cups Mozzarella cheese
Insstructions:
- Preheat oven to 350*.
- Cut the chicken into bite sized pieced and add to a 9×13 pan.
- Mix together the cream soup and sour cream and pour over the chicken.
- Sprinkle the Mozzarella cheese over the chicken.
- Top with the prepared stuffing. (Follow the instructions on the stuffing box.)
- Cover and bake for 25 minutes until bubbly and the chicken is completely cooked.
Serve and enjoy!

No - I usually don't but you could spray a little Pam on it if you wanted to make sure if doesn't stick.
