I have had so many Holiday Posts that I thought I would throw is a delicious and easy recipe your family will love. In the past I have tried some recipes for Potato Soup and I have never found the right combination. I like it creamy – but not to much milk products in the soup.
So I finally found the perfect combination. And it’s not as bad for you as most Potato Soups. I’m not claiming that it is a “health food” but I feel like I got a serving of veggies!
My middle boy loves soup. He’s only 6 – and he’s out little comedian. I knew he would really like this. He took a bite of his soup and looked at me with a serious face and said “I don’t like it”. I was a little surprised because I was pretty proud of this soup. After a long pause he started to laugh and said “I love it!”. This is warm, thick, and hearty soup that is perfect for these cool nights!
Potato Soup
Ingredients
- 8 slices of bacon, diced nto 1-inch pieces
- 1 whole medium yellow onion, diced
- 3 carrots, diced
- 3 stalks Celery, diced
- 3 large potatoes, peeled and diced
- 9 water
- 1/4 cup chicken bouillon
- 2/3 cup half and half
- Pepper To Taste
- Cheddar Cheese
Instructions
- Add bacon pieces to a large stock pot over medium heat and cook bacon until crisp and cooked. Remove the bacon from the pot and set it aside on a paper towel. Remove most of the grease, leaving about 2 Tablespoons in the soup pot.
- Over medium heat and add the onions, carrots, and celery. Stir and cook for about 5 minutes until they begin to soften.
- Add the water and chicken bouillon. Then add the diced potatoes. Bring to a boil and let cook until the potatoes are soft (about 15 minutes).
- Add some soup to a blender until completely it’s completely smooth. (You can do it a little less if you like some chunks.) Tip – Don’t fill the blender completely because the liquid will expand and could overflow.
- Pour it back into the soup pot and and in the half and half. Stir until it is well combined.
Serve and enjoy! Garnish with some grated cheese and the bacon pieces.
This will be one of the few recipes that I will keep on my menu.

This look very good and perfect for the cold winter months. I do believe I know what I will be making this weekend!
