Apple, Pecan Chicken Salad

I have been trying to eat healthier foods. I’m a busy mom of 3 kids so I need to be able to prepare quick and easy foods that we will all love. I didn’t use to love salads but then I realized it was because I was making boring salads. I started to combine new flavors and textures to my salads so they would be more enjoyable.

During the holiday, you get invited to parties. I like to bring healthier options so I can snack on a little bit of everything. One of my favorite things to bring is my Apple Pecan Chicken salad. There are so many flavors that you will not realize you are eating healthy. Plus this is so easy to throw together!

Apple Pecan Chicken Salad

• Lettuce – A mixture of romaine and spinach
• 1 pound cooked chicken
• Salt, to taste
• Pepper, to taste
• Garlic powder, to taste
• Candied pecans
• 1 Granny Smith Apple, diced
• Litehouse Gorgonzola cheese
• Litehouse Raspberry Walnut Salad dressing
• Litehouse herbs

Cut the chicken into bite-sized pieces and season with salt, pepper, and garlic powder. In a large frying pan, cook over medium heat until cooked completely. (You may need a little oil in the pan.)

Assemble your salad: Lettuce, chicken, candied pecans, and apples. Sprinkle with Gorgonzola cheese and herbs and top with Raspberry Walnut Salad dressing,

Serve and enjoy!
