Sometimes you just need a casserole for dinner to warm you up in the Fall and this Ranch Chicken Casserole will not disappoint you. I have been having a hard time finding a meal that my whole family likes. It feels like my kids are getting pickier especially my daughter. I'm grateful she loves to eat fruit but she doesn't like many vegetables nor does she like anything for dinner that actually has any flavor. Sometimes I can get her to eat chicken if it's covered in Ranch Dressing.

So that is why I decided to make a casserole that combined the deliciousness of a casserole but tasted like Ranch dressing. It's pretty easy to throw together and it should server at least 6 people with some leftovers.

Ranch Chicken Casserole

  • 2 cups cooked chicken breasts, shredded
  • 1 ½  cup cooked rice
  • ½  cup mayonnaise  
  • 1 cup sour cream
  • 1 packet ranch dressing
  • 1 can cream of chicken soup
  • 1 bag of frozen broccoli, cooked
  • 2 cups shredded cheddar cheese, divided

Instructions:

  1. Preheat oven to 350*. Great a 9x13 pan and set aside.
  2. In a large bowl mix together all the ingredients except for at least ½ cup of cheese.
  3. Add to the greased 9x13 pan and top with the rest of the cheese.
  4. Cover and bake for 20 minutes. Uncover and bake for an additional 5-10 minutes until the cheese on top is melted.

A note about the cheese....If you want more cheese you can add more. I just like to stick with the 2 cups because I usually have packages in my refrigerator that are already pre-measured in 2 cup packages.

I think this casserole has a lot of potential to change up the flavors. I may try to use Italian dressing instead of Ranch. You can also top it with crackers or french onions to change up the flavors. No matter what you do, I don't think this is a casserole that can taste bad.

  2. This looks like the perfect recipe for my family. We eat alot chicken but I've never made ranch chicken. My oldest daughter says she could live on just chicken so thanks for the new recipe.
