I love this time of year because it’s full of family and food! I love all the parties we get invited to, and I am counting down the days until the holiday break. My kids love to help me in the kitchen. There is no limit to the amount of cookie recipes we want to make. Each kid has their favorite recipe, and we make sure to spend time together baking their recipes.

Since so many recipes use the oven, we have two recipes that we can make on the stove top. We are a cereal loving family. We always have Rice Krispies in our house and often make traditional Rice Krispies Treats. These two Rice Krispies desserts take Rice Krispies treats to a whole new level. They are so easy and taste amazing! Plus they make plenty in case you want to bring them to a holiday cookie exchange.

Caramel Filled Rice Krispies Treats

Ingredients:

Caramel Filling

  • 11 oz bag of caramels (unwrapped)
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup butter ( 1 stick)

Rice Krispies Treats

  • 8 Tbsp butter, divided in half
  • 10 cups Rice Krispies cereal, divided in half
  • 8 cups mini marshmallows, divided in half

Instructions:

Grease a 9×13 pan and set aside.

In a medium sized saucepan, combine the caramel pieces, sweetened condensed milk and 1 stick of butter.

Mix the ingredients constantly over medium-low heat.

Once the caramels are melted, set aside.

Rice Krispies Treats

In a large pot, melt 4 Tablespoons of butter over medium heat. Once the butter is melted, swirl it around the pot.

Add 4 cups marshmallows and stir until the marshmallow are completely melted.

Pour 5 cups Rice Krispies Cereal into marshmallow mixture, stir until coated. Press into the bottom of prepared pan.

Pour the caramel mixture over the top of the Rice Krispies treats.

Clean out the pot that had the Rice Krispies Treats and repeat. Melt the butter, then add the 4 cups of marshmallows, stir in the 5 cups of Rice Krispies and pour it on top of the caramel layer.

Using parchment paper or your hands coated with butter or cooking spray, gently press the Rice Krispies to cover the caramel filling.

Let them cool for about an hour before you cut them. Depending on how big you cut them, they should make at least 24 servings.

We love these! I shared them with my friends and neighbors, and they thought they were amazing! The caramel filling is like a dulce de leche.

The next recipe is just as easy and more fun for the kids to help shape the cookie balls and place the chocolate on top.

No-Bake Cocoa Krispies Cookies

Ingredients:

  • ¼ cup brown sugar
  • ½ cup corn syrup
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 3 cups Cocoa Krispies
  • 30 chocolate shaped like kisses, unwrapped (or any miniature version of your favorite candy)

Instructions:

In a medium saucepan mix together the brown sugar and corn syrup over medium heat. Continue to stir it constantly until it comes to a full boil.
Remove the pan from the heat and add in the peanut butter and vanilla. Mix well until combined.

Add the Cocoa Krispies to a big mixing bowl and pour the peanut butter mixture over the cereal. Stir until the Cocoa Krispies are well coated.

Drop small balls of the mixture onto a cookie sheet. Flatten them a little and then push a chocolate candy into the center of each cookie ball. Then gently form the cookie around the base of the chocolate.

Set aside and let the cookies cool for a few minutes so they can set up.

I love "no bake" treats! I love the easy to follow recipes. I can be confident enough to make them without worrying they'd end up as a major fail. No bake is always great! And yummy too. :)
