Dark Red Velvet Cupcakes with Irish Buttercream Frosting Recipe

Dark Red Velvet Cupcakes with Irish Buttercream Frosting

Cupcake Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoon baking soda
  • ¼ cup dark cocoa powder
  • ½ teaspoon pink Himalayan salt
  • 1 ½ cups white granulated sugar
  • 1 1/2 cups salted butter, room temperature
  • 2 large eggs, room temperature
  • ¼ cup chocolate Greek yogurt
  • 1 cup buttermilk
  • 1 teaspoon cocoa extract
  • 3 teaspoons red gel food coloring

Frosting Ingredients

  • 2 sticks (1 cup) Irish butter, room temperature 
  • 4 cups confectioners’ sugar
  • 3 tablespoons vanilla-flavored coffee creamer
  • ½ teaspoon sea salt
  • Large round black candy pearls (I found mine on Amazon)

Cupcakes Instructions

Preheat your oven to 350 degrees. Line a 12-cup muffin pan with baking liners and set aside. 

In a large mixing bowl, add flour, baking soda, baking powder, salt, and cocoa powder. Sift together and set aside.

In another bowl, add butter and mix on low for 1 minute or until creamy. Add in the sugar and mix for 30 seconds to one minute, or until light and fluffy. Slowly add in the eggs, milk, yogurt, and cocoa extract and mix for an added 30 seconds. 

Slowly add the wet mixture into the dry mixture. Mix on medium until well incorporated. 

Add 1-2 teaspoons of red food coloring.

Fill each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched. 

Remove from oven and allow to cool for 10 minutes. 

Remove cupcakes from pan and place on a wire rack until completely cooled.

Frosting Instructions

In a large mixing bowl or stand mixer, beat butter for 1-2 minutes, or until creamy. Add in the salt.

Slowly mix in the powdered sugar, 1 cup at a time, alternating 1 tablespoon of cream until creamy, light, and fluffy and it forms stiff peaks. 

Place in a piping bag and frost cupcakes. 

Add the edible black color pearls for your Dalmatian spots.
