Cauliflower Rice – Vegan & Gluten Free

Some of my kid’s favorite meals us cauliflower rice  – and they know it’s not white rice!

One of our favorite recipes is to mix it with cooked chicken, mayonnaise, greek yogurt, bacon, and spices. We top it with some shredded cheddar cheese and it’s one of our regular low-carb dinner recipes!

This recipe will work if you have a head of cauliflower or a bag of cauliflower rice! I like to use as many shortcuts in my kitchen to make dinnertime easier but this recipe also gives you instruction if you use a head of cauliflower. 

I usually pick up this 4 pack of cauliflower rice at Sam’s Club.

Cauliflower Rice – Vegan & Gluten-Free

Ingredients

  • 1 medium-to-large head of cauliflower (or skip this and use a 12oz bag of cauliflower rice)
  • ½ cup chopped green beans
  • ½ cup corn kernels
  • 2-3 cloves garlic minced
  • 1 teaspoon of red pepper flakes
  • ¼ teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil
  • ½ cup chopped coriander leaves
  • 1 teaspoon zaatar spice mix
  • 1 tablespoon lemon juice
  • Freshly ground black pepper, to taste
  • 1-2 teaspoon tahini

Instructions:

 

Enjoy a bowl of flavorful cauliflower rice that is vegan and gluten-free! Or pair it with your favorite meat!

If using a whole cauliflower, cut the head of cauliflower into medium pieces and throw away the core. Work in batches, pulse the chunks in a food processor with the S-blade until you’re left with tiny pieces.

Wrap the cauliflower rice in a clean muslin towel and twist, and squeeze as much water as possible from the rice.

 

 

Add the olive oil to a pan with the garlic cloves on medium heat.

Stir constantly for about 20-30 until the garlic is fragrant. You don’t want to burn the garlic.

Add the green beans and corn to the pan.  Toss it for few seconds, and then add the cauliflower rice, zaatar spice mix, red pepper flakes, salt, and black pepper and stir to combine.

 

 

Stir frequently until the rice is hot and turns golden – about 7 to 10 minutes.

Remove the pan from the heat. Stir in the tahini, coriander leaves, and lemon juice.

 

 

Season to taste with salt and pepper, and serve warm.
