My kids love my homemade pancakes! And I love that my pancake recipe without buttermilk makes really fluffy and moist pancakes! No more wasting your money on store bought box mix pancake mix with this recipe!

The pancake batter is easy to whip together with simple ingredients you already have in your house!

I remember the first time I made these pancakes and I couldn’t believe how perfect they were. In the past, I could never get the perfect pancakes rise. They were flat pancakes or almost raw inside. But not this recipe – it’s perfect every time!

Please note that this easy recipe does NOT have baking soda. This is why it contains so much baking powder and this is what makes these the fluffiest pancakes!

Variations to the best pancake recipe:

  • Add some chocolate chips to the batter. It’s better to add it to the batter than to sprinkle it on the pancakes – they will cook more evenly. Or you can top your pancakes with Nutella!
  • My husband loves to spread some peanut butter on his pancake and top with some syrup and
  • Switch out some of the all-purpose flour for whole wheat flour.
  • Add a splash of vanilla extract to the milk mixture to sweeten up the recipe.
  • I use 2% or whole milk for this recipe.
  • I like to test out the first pancake to make sure I have a hot skillet. This is my test pancake.
  • The recipe makes so much batter that you will have to store the leftover pancakes in an airtight container or freezer bag.

Fluffy Pancake Recipe

  • 2 cups all-purpose flour
  • 2 Tablespoons of baking powder
  • 1 teaspoon salt
  • 1/4 cup white sugar
  • 1/4 cup oil
  • 2 eggs, beaten
  • 2 cups of regular milk

 

Preheat an electric griddle or large skillet to medium heat. (I prefer a griddle.)

Combine all the dry ingredients in a medium sized bowl. In a large mixing bowl mix the wet ingredients.

Pour the dry ingredients into the wet ingredients and mix until there are no lumps. Make sure not to over mix.

 

Add a little melted butter to the pre-heated griddle then add about 1/3 cup of batter.

 

When the edges become dry and the top is bubbly flip the pancake and cook the other side for about a minute. It should be a nice golden brown.

 

Let cool and freeze any leftovers. Re-heat in the microwave for about 20 seconds per pancake.

Sometimes when I have milk that is about to expire I make an extra batch of pancakes and freeze them. This is not a Sunday morning only recipe! Sometimes we enjoy these pancakes for dinner with a side of fresh fruit!

I just made these pancakes for the kids and I as Daddy went to work. While I made a couple adjustments, oh my goodness, they are amazing. Before I measured the milk, I added in 2 tbsp vanilla. Mixed it all in and the batter was a bit runny for me so I added in 2 tbsp flour, 1 at a time. Definitely a keeper for a recipe.

Thank you for this!! Yesterday I attempted a recipe for fluffy pancakes to a T and they came out so thin I've been craving pancakes like crazy with this pregnancy and yours are absolutely perfect! So soft and fluffy! I added raspberries to my mix instead of chocolate chips though 😋😋
