Onion Roasted Potatoes Recipe

When I make dinner, I want to use recipes with simple ingredients. This new recipe for onion roasted potatoes only uses a small bag of new potatoes, onion soup mix, and olive oil. It’s a great side dish for so many meals. It’s a nice change to not eat french fries again with the main dish.

In my house I always have potatoes – sweet potatoes, all purpose potatoes, Yukon gold potatoes – there are just so many delicious potato recipes that I can whip up for an easy side dish.

Sometimes I use these small potatoes to throw in a slow cooker with a pot roast and other times I bake them on a sheet pan. They have such a great flavor.

 

This recipe for onion roasted potatoes only uses a small bag of new potatoes, onion soup mix, and olive oil. It's a great side dish for so many meals.  

 

Onion Roasted Potatoes Recipe

Ingredients:

  • 1 Bag of small tri-color potatoes (24 oz)
  • 1 envelope Lipton Onion Soup Mix
  • 2 Tablespoon olive oil (or vegetable oil would work too)

Instructions:

Preheat oven to 400°.

Wash potatoes and trim off any bad spots. If the potatoes are large chunks, you can cut them into small pieces so they are all the same size.

 

 

Place potatoes in a large bowl and mix in olive oil so that all the potatoes are coated.

 

 

Sprinkle the dry onion soup mix on the potatoes and thoroughly mix.

 

 

 

Place potatoes on a rimmed baking sheet in a single layer and bake at 400° for 40 minutes – they will be fork-tender and a nice golden brown with a crispy exterior.

Halfway through cooking, you can stir the potatoes around on the sheet to help them get browned on all sides.
