Our family loves baked potatoes. So when I make them – I always make a big batch so that we can have leftovers. My kids love leftover potatoes because they are so easy to reheat! It’s usually a special treat or a side dish recipe – but I think we should eat this weekly!
Our favorite way to enjoy classic baked potatoes is with many tablespoons butter, cheddar cheese, green onions, a dollop of sour cream, crispy bacon, and a little salt and pepper on top of the potatoes! They are so easy to make!
How to make a baked potato:
Heat your oven to 425* Poke the raw potatoes with a fork or a sharp knife a few times. Place some foil on the bottom rack of your oven. Cover your potatoes with a little olive oil and salt. Place on the upper rack of your oven and bake for about 25 minutes. Poke a fork in it – if it’s soft, it’s done. If it’s still hard cook in 10-minute increments until cooked.
You can also wrap them in aluminum foil and place them on a baking sheet but I think they get crispier on the oven rack.
Or put them in your crock pot to cook! Poke them a few times and cover in olive and salt and wrap them in foil. Cook on high for 3-4 hours or low for 5-6 hours until soft. This is the easiest way to make them in the summer.
I like to store the leftover potatoes in a freezer bag or plastic wrap until I need them. It’s also best to use russet potatoes to make baked potatoes.
There are other ways to enjoy baked potatoes:
- Chili baked potato: top it with your favorite chili, cheddar cheese, sour cream, and green onions.
- Broccoli cheese baked potato: topped with broccoli and melted cheddar cheese – yum!
- Mexican baked potato: topped with a scoop of guacamole, and salsa plus extra cheese and crumbled tortilla chips. Also, add leftover taco meat to make this a great leftover meal!
