One Pot Tomato Basil & Pasta Dinner Recipe (Kid Friendly Version)

I hate dishes! I am pretty lucky that my husband will do dinner dishes – but I still hate to make a mess. So I have seen this One Pot Tomato Basil & Pasta Dinner Recipe floating around and I liked the idea. I really liked that this recipe used fresh basil because we have some growing in the garden and I really wanted to try it. I think fresh basil is what has been missing in my sauce recipe all these years!

This was such a delicious and easy meal. I will be making this often. My kids really love spaghetti and I love that I can make this from scratch. Here is the recipe that inspired my changes.  Mine is a little saucier than hers, but my family isn’t really into chucks in their sauce.

One Pot Tomato Basil & Pasta Dinner

  • 12 ounces linguine* pasta
  • 1 can (15 ounces) tomato sauce
  • ½  red onion, finely diced
  • 2 large garlic cloves,  minced
  • 1 teaspoons dried oregano leaves
  • 2  sprigs basil, chopped
  • 4 ½  cups chicken broth (I used 4 1/2 cups of water and 2 Tablespoons of bouillon)
  • 1 teaspoon extra virgin olive oil
  • Parmesan cheese for garnish
  • Salt & Pepper to taste

Instructions:

  1. Add pasta, tomatoes, onion, garlic, basil, in a large stock pot, and chicken broth to a large stock pot.
  2. Drizzle top with oil.
  3. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes. Make sure you stir it every 2 minutes so the pasta wont stick to the bottom.
  4. Cook until the pasta is done and the sauce is the desired consistency.
  5. Add salt and pepper to taste (I didn’t need any).
  6. Top with parmesan cheese if desired.

See how easy and healthy that is? I am not a big pasta lover but I had 2 bowls! I actually used thin spaghetti and just cooked it a little less. Use what ever pasta you have in your pantry.
