Beef A La Mexicana {Slow Cooker Meal}

You may be surprised to know that not all Mexican food is spicy. Pretty much everything my friend from Mexico makes has tomatoes, garlic and onions. Sometimes they are pureed in a blender and cooked with some kind of meat (like a salsa) or they just dice up the ingredients and add them to meat.

I had some ingredients in my refrigerator that I really need to use up. So I threw all these ingredients in my crock pot and it reminded me of some of the meals my friend has shared with me. It’s really easy to throw together and you probably have most of these ingredients in your house. I know I always have these ingredients in my house!

Crock Pot Beef Dinner

Beef A La Mexicana

  • 2 pounds cubed beef (like for beef stew)
  • 1 Can of diced tomatoes (14.5 oz)
  • 2 large bell peppers (red and green), sliced
  • 2 clove garlic, minced
  • 1 yellow onion, diced
  • salt and pepper to taste

Instructions:

  1. Add all the ingredients to your slow cooker.
  2. Cook on high for 3-4 hours or low for 5-6 hours.
  3. Serve with rice and enjoy!

This is a very easy and pretty frugal meal. Do you have most of these ingredients in your house?
