 Easy Chicken Fajita Grinders & Wraps With Tyson® Chicken

In just a few days my kids will go back to school. I can’t believe the summer is over. I will really miss sleeping in past 6am but I am really looking forward to having a little more structure in our lives. We now have homework and baseball practices and games, so I need to be a little more organized. I need to meal plan and use products that are quick and easy but also delicious.

I love the Tyson® Grilled & Ready® Chicken and Tyson® Crispy Chicken Strips. I can grab a big bag in the frozen section when I’m shopping at Walmart and I only need to pull out what I need and it is ready to eat in a few minutes. These are great by themselves but I have 2 super simple recipes that will impress your family, taste amazing, and have you in and out of the kitchen in less than 30 minutes!

I like to cook once and use it twice. Both the Tyson® Grilled & Ready® Chicken and Tyson® Crispy Chicken Strips make my meal time easier for my family and they are high quality and low effort products. They taste great with fajita vegetables but are 2 different meals. Chop up and sauté double vegetables and fajita seasoning and put half in the fridge for another super simple supper.  First up is the Chicken Fajita Grinder!

I love a good sandwich. This recipe is so flavorful and I love the melted cheese and the sour cream that just goes perfect with the crusty bread.

Chicken Fajita Grinder

  • 1 yellow pepper
  • 1 red pepper
  • 1 yellow onion
  • 1 Tablespoon olive oil
  • 1 Tablespoon of your favorite fajita season (see note below)
  • Tyson® Grilled & Ready® Chicken
  • Hoagie rolls
  • Sour Cream/Mexican Creama
  • Cheese (I use sliced Monterrey Jack)
  • Any other toppings you enjoy with your fajitas

Instructions:

Cut up the peppers and onions into strips. In a large frying pan add the olive oil over medium heat. Add the fajita vegetables and sauté until almost soft.

Add your desired amount of Tyson® Grilled & Ready® Chicken and sprinkle the fajita mix. The chicken is completely cooked but it is frozen, so all you need to do is cover the pan and heat it with the vegetables for a few minutes and it’s ready to eat!

Once the chicken is heated and the vegetables are soft, cut your hoagie rolls in half. I like to add the rolls to the toaster to give it some crunch but you can skip this part if you just want the sandwich warmed up.

Top the bread with some sour cream. Then add the chicken mixture and top with cheese. Place it under the broiler for about 2 minutes until the cheese is bubbling. (Make sure you watch it!)

Serve and enjoy! In less than 30 minutes and you have a filling meal to feed your family before you have to run out to the next event.

I also like to make Chicken Fajita Wraps. My kids love to eat the Tyson® Crispy Chicken Strips but it’s nice to add just a few ingredients and make it into a new meal.

Chicken Fajita Wraps With Guacamole

  • 1 yellow pepper
  • 1 red pepper
  • 1 yellow onion
  • 1 Tablespoon olive oil
  • 1 Tablespoon of your favorite fajita season (see note below)
  • Tyson® Crispy Chicken Strips
  • tortillas
  • cheese
  • limes
  • sour cream
  • guacamole (recipe below)

 Instructions:

Preheat the oven and heat the chicken strips according to the package instructions. I usually only need 1 chicken strip per wrap – so only heat what you need.

While the chicken in heating you can cut up the peppers and onions into strips. In a large frying pan add the olive oil over medium heat. Add the fajita vegetables and sauté until almost soft. (Or heat them up if you double the vegetables from the previous recipe.)

Sprinkle the fajita mix over the vegetables, stir, and cook for about 3 minutes and set aside.

Once the chicken strips are heated up, create your fajita wrap! Top it with cheese, sour cream, guacamole, etc and enjoy.

Guacamole

  • 1 roma tomato, diced
  • 1 avocado
  • 1/4 of a red onion, diced
  • Juice of 1 lime
  • salt (to taste)

Instructions:

Mix all the ingredients together and enjoy on your fajita wrap or with your favorite tortilla chips.

Note: I use my DIY Taco Seasoning as my fajita mix too.

Double duty meals are my favorite. You save so much time when you prepare once and eat twice. So when you are making your meal plan, try to figure out what you can prepare ahead of time to make another meal a little easier to prepare.
