Confetti Popcorn

If you made a list of all the things that moms do - it would be long! We would probably look at it and think, how do I get this all done? One of those things for me (lately) is grocery shopping. I'm in a food rut. But I make my list and get the foods that I know my kids like to eat. What's even harder is to clip coupons and search the sales to get the best deals.
I think back to the day when I was younger. I was the oldest of 4 kids. My mom worked from home, which was very rare in the 80's) and I can't believe everything she did. She cooked every meal - we never ate out. She did all the chores - we never had to even make our bed. She said that we would have plenty of chores to do when we grew up. The house was always spotless! She also did all the grocery shopping, looked for deals, and clipped coupons to make the money stretch further. She is a pretty amazing mom!

Wonder Woman Inspired Confetti Popcorn
Ingredients
- 2 Tablespoon butter
- 8 cups popped popcorn (2 bags of Orville Redenbacher’s® microwave pop up bowl popcorn)
- 4 cups mini marshmallows
- 1 cup white cake mix
- 2 teaspoons vanilla
- 1 Tablespoon milk
- Sprinkles (red, white, and blue stars and gold glitter)

In a large pot add and melt the butter and then add the marshmallows over medium heat, stirring constantly.
Once the marshmallows are completely melted, remove from heat and add the cake mix powder, vanilla and milk mix. Stir until well combined and add as much of the popcorn into the pot. Stir it well making sure to scoop the marshmallow cream from the bottom. Add some sprinkles as you are mixing it.
Pour it back onto the parchment lined cookie sheet and try to coat any of the popcorn that didn't make it into the pot.
