Today’s recipe would be perfect for Disney Princess Party – especially if it was a Princess Aurora party from Sleeping Beauty.
This cupcake is made with a strawberry gelatin mix to give you a yummy raspberry flavor. Plus you will love the addition of white chocolate in the buttercream icing!

You will make the cake and icing from scratch – and even make your own buttermilk to make the cake extra moist!
Princess Aurora Raspberry Cupcakes with White Chocolate Raspberry Buttercream Frosting
Cupcake Ingredients:
- 2 cups all-purpose flour
- 1 cup white granulated sugar
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup salted butter, room temperature
- 3 egg whites, room temperature
- 1 3.9-ounce package of raspberry gelatin mix
- 1 cup whole milk
- 1 teaspoon white vinegar
- 2 teaspoons pure vanilla extract
White Chocolate Raspberry Buttercream Frosting Ingredients
- 2 sticks (1 cup) room temperature unsalted butter
- 1/2 cup white chocolate chips
- 4 cups confectioners’ sugar
- 3 tablespoons heavy cream
- 1 teaspoon raspberry extract
- Light pink gel food coloring
- Small white candy pearls
- Candy gold crowns
Preheat oven to 350 degrees. Line a 12-cup muffin pan with baking liners.
In a large mixing bowl, add flour, baking soda, and baking powder. Sift together and set aside.
In a small bowl, add the milk and vinegar. Mix well and set aside.
In a separate bowl, add butter and mix on low for 1 minute or until creamy.
Add in the sugar and mix for 30 seconds to one minute, or until light and fluffy.
Slowly add in the egg whites and vanilla and mix for an added 30 seconds.
Whisk gelatin mix into the dry ingredients.
Add the milk mixture into the wet ingredients. Slowly add the wet mixture into the dry mixture.
Mix on medium until well incorporated. Add 1-2 drops of pink food coloring if desired.
Fill each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched. Let cool.
Buttercream icing instructions:
In a large mixing bowl or stand mixer, beat butter for 1-2 minutes, or until creamy. Add in the raspberry extract.
Melt white chocolate chips in a microwave-safe bowl in 30-second bursts, stirring after each. Mix into the butter mixture until smooth.
Slowly mix in the powdered sugar, 1 cup at a time, alternating 1 tablespoon of cream until creamy, light, and fluffy and it forms stiff peaks.
Add in 1-2 drops of pink food coloring, or until the desired color is achieved.
Place in a piping bag and frost cupcakes.
