Eating out can get expensive. So I have tried to come up with a few dinner recipes that are better than takeout. They are cheaper and probably better for you! Plus you can get them on the table faster than placing the order and picking it up!

We eat a lot of chicken. One of our favorite ways is to cube it and add it to my cast iron skillet with some oil sprinkled with salt, pepper, and garlic powder. We add it to All Postssalads and wraps. It’s even a great way for my husband to eat a carb-free, sugar-free dinner when I make this yummy copycat Chick Fil A Sauce. (He really feels like he’s eating grilled nuggets!) 

I love to find chicken dinner recipes that are quick and easy to throw together! This recipe starts the same way but tastes totally different.

I love this recipe because you don’t have to take that extra step to cover the chicken in cornstarch and the chicken is still delicious. 

Plus no bourbon but you still get the sticky, sweet, delicious bourbon chicken you love!

Easy Bourbon Chicken Recipe – 30 Minute Meal

  • 2 pounds boneless, skinless chicken breasts, cut into 1– inch chunks
  • 1 tablespoon olive oil
  • 1/4 cup water
  • 1/3 cup low sodium soy sauce
  • 1/2 cup apple juice
  • 1 tablespoon apple cider vinegar
  • 3/4 teaspoons ground ginger
  • 2 garlic cloves, minced
  • 1/3 cup brown sugar
  • dash of pepper
  • 1 tablespoon cornstarch + 3 Tablespoons water

Instructions:

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. (I like my cast-iron skillet.)

Add the chicken to the skillet, stirring occasionally until browned and cooked through, for about 8 minutes.

While the chicken is cooking, whisk together the water, soy sauce, apple juice, vinegar, ginger, garlic, brown sugar, and black pepper. Set aside.

Cook the chicken completely and add in the soy sauce mixture and stir it to combine.

Turn the heat down to medium-low and let it simmer for about 10 minutes until the liquid has reduced by half. Stir it occasionally.

In a small bowl whisk the cornstarch with 3 tablespoons of water until smooth. Add this mixture into the chicken and stir well to combine.

Cook for about 1 minute. The mixture will thicken quickly.

Remove from the heat and serve over rice. This would also be great with fried rice.

I rarely went to the mall without getting bourbon chicken from the food court.I have yet to find any that taste the same.I would love to be able to make my own and this recipe seem simple enough.
