Pumpkin Cranberry Cake With Cream Cheese Frosting

Cake Ingredients

  • 1 ½ cups  all-purpose flour 
  • ½ cup of sugar
  • ⅓ cup pumpkin puree
  • ¼ cup Milk
  • ⅓ cup vegetable oil
  • ⅓ cup chopped dried cranberries 
  • 2 eggs
  • ½ teaspoon ground cinnamon 
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder 

 

Frosting ingredients

  • ⅓ cup cream cheese 
  • ¼ cup whipping cream
  • 2 tablespoons powdered sugar

Instructions for the cake

Combine the eggs and sugar in a large bowl. Whisk this until the mixture becomes frothy.

Add the oil, milk, and pumpkin puree and whisk until everything is combined. 

Add all the dry ingredients into a small bowl and combine. Fold all the dry ingredients into the wet until a uniform batter forms.

Add the chopped cranberries and fold it evenly into the batter.

 

 

Pour this batter into a greased and lined 8×8 pan.

Bake it in a preheated oven at 350* for about 45-55 minutes until a skewer inserted in the middle comes out clean.

Let it cool completely before you add the frosting.

  • Add all the ingredients into a bowl and whisk for about 5 minutes or until stiff peaks form.
