Strawberry Shortcake Cake is the perfect cake to bring to a party!

It’s so pretty and delicious and it tastes just like Good Humor Strawberry Shortcake Ice Cream bars!

This cake is a strawberry cake + vanilla buttercream frosting + strawberry crunch! It’s the best strawberry crunch cake recipe! 

I love to bake. And we get tired of the same cakes. So I like to mix things up! A few weeks ago we had the Good Humor Strawberry Shortcake Ice Cream bars and I had to figure out how to make the strawberry crumble.

With just 3 ingredients – I made something that was exactly what I was looking for! We added it to this cake and it was perfect! Now we can’t wait to try out all the other ways we can use this strawberry eclair crumble!

We have a big family and get together often for dinner – so I am always trying out new recipes and bringing them to family events. They don’t mind being my guinea pigs! 

They all gave this recipe 5 stars! And couldn’t believe how much it tasted like a Good Humor Strawberry Shortcake Chocolate Bar!

This cake is so good! You start with a box mix and then add things to it to make it better! I have tried so many times to make a cake from scratch and I just can’t get it to taste as fluffy and moist as this cake.  

Cake mix + extra ingredients will make the most delicious cake! I use the same cake recipe to make my White Cake With Strawberries and White Chocolate Whipped Mousse. You have to try it!! 

The Vanilla Buttercream is so good! It’s very basic but so easy to make!

Oh and that strawberry crumble….you will have to fight off your family from eating it all while you are preparing the cake!

If you have leftover crumble…this stuff is so good to just enjoy by the handful! I may try to make some more recipes with it because I made a double batch!

Some ideas we have are Rice Krispy Treats with the crumble and Chocolate covered Strawberries covered in the crumble! It all sounds so yummy!

 

 

Tips to make the Strawberry Shortcake Cake:

  • You need parchment paper!! This will ensure your cakes come out of the pans without sticking. 
  • For the frosting, make sure the butter is soft, but not melted. 
  • When you add the strawberry crumble, place wax paper under the plate so you can catch it and reuse what falls off. Or place it on a cake stand and put the cookie sheet next to the cake to catch the crumble that falls off. 

 

 

What You Need To Make a Strawberry Shortcake Cake 

  • White Cake Mix (do not use the directions on the box)
  • Flour
  • Sugar
  • Sour cream
  • Water
  • Oil
  • Egg whites
  • 1 3oz box Strawberry Jello

 

 

 

Vanilla Buttercream Frosting

  • Butter 
  • Powdered Sugar
  • Heavy Cream
  • Vanilla

 

 

The Strawberry Crumble (Like the strawberry crunch on a Good Humor Ice Cream Bar!) 

  • Golden Oreos
  • Strawberry Jell-O
  • Butter

Strawberry Shortcake Cake (Good Humor Bar Copycat)

This Strawberry Shortcake Cake is delicious and tastes just like the Good Humor Strawberry Ice Cream Bars.

Ingredients

  • 1 box White Cake Mix (do not use the directions on the box)
  • 1 cup flour
  • 1 cup sugar
  • 1 cup sour cream
  • 1 1/3 cup water
  • 2 Tablespoons oil
  • 4 egg whites
  • 1 - 3oz box Strawberry gelatin mix

Vanilla Buttercream Icing

  • 1 1/2 Cup Butter, softened
  • 6 cups powdered sugar
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract

Strawberry Shortcake Eclair Crumble

  • 18 Golden Oreos
  • 4 Tablespoons Butter, melted
  • 3 Tablespoons Strawberry Jello

Instructions

How To Make Strawberry Cake:

Preheat oven to 350*. Line 2 – 9 inch round cake pans with parchment paper and set aside.

In a mixer add the cake mix, flour, sugar, sour cream, water, oil and strawberry gelatin mix. Mix until combined. Then add 1 egg white at a time. Once all the eggs are in, mix for about 90 seconds.

Divide the cake batter between the 2 cake pans. Bake for about 22-25 minutes until a knife comes out clean. If you need to add more time, do it in 3-minute increments.

Let cool completely. Put one cake on a plate or cake stand. I like to flip the cake into my hand and remove the parchment paper and then put it baked side down on the cake plate. Trim the cake to make it even. (You can place the cakes in the freezer to handle them easier.)

How To Make the Vanilla Frosting

Use the paddle attachment on your stand-up mixer and beat the butter on medium speed until smooth.

Turn the speed to low and slowly add the powdered sugar until it is mixed in.

Slowly add the vanilla and heavy cream. Turn the mixer up to medium speed and mix for 1 minute until creamy.

Add additional heavy cream, if you desire a creamier frosting.

How To Make The Strawberry Eclair Crumble

Pulse the Golden Oreos in a food processor until they are crumbly.

Mix together the crumbled Oreos, butter, and the strawberry Jell-O powder.

Set on a cookie sheet lined with parchment paper and let it "dry" for about an hour.

How To Assemble the Strawberry Shortcake Eclair Cake

Set one of the cakes on a plate. Add about 1 cup of icing and top it with the other white cake.

Start frosting the sides with an icing spatula. Once the sides are covered, add frosting and spread until the whole cake is covered.

Place some wax paper under the cake plate. Add some of the strawberry eclair crumble into your hand and place it along the sides of the cake. Go completely around the cake. You can scoop up what falls on the wax paper.

Add the crumble to the top of the cake until as much of the white frosting is covered.

Serve and enjoy!

What would the baking time be if I use a 9x13 cake pan?

I have never made it in a 9x13 pan but I would check it around 26 minutes and then do 3 minutes at a time.

I have never made it in a bundt pan. I would think you would have to increase the cooking time - a lot. Check it at 40 minutes and every 5 minutes after.
