This meal is so simple! This recipe uses your favorite BBQ sauce – grab your favorite store-bought bbq sauce so you don’t have to worry about measuring the garlic powder, onion powder, brown sugar, chili powder, or liquid smoke! Less mess!

Yes! I love to cook frozen chicken in my electric pressure cooker. All you need to do is adjust the pressure cooking time to 12 minutes and the natural pressure release time to 12 minutes. Yes, it takes a little longer, but it’s my favorite way to make dinner when all you have is frozen meat!

Using frozen meat is the easiest way to get a delicious dinner on the table on a busy day. The Instant Pot is a great way to make dinner with frozen meat.

 

 

Can I use hamburger buns for the barbecue chicken sandwiches?

Of course! This is one of those recipes that you make based on what you have at home. You could even use hot dog buns if you realize you are out of slider buns and hamburger rolls. Or make them a little fancier with brioche buns.

If you are working on meal prep and want to make a lot of chicken, you can shred chicken with the paddle attachment in a stand mixer. Or grab some meat claws to shred the meat.

If you only have tortilla shells – you could shred the chicken and add it to the tortillas with the meat, more of your favorite barbecue sauce, and cheese to make instant pot chicken tacos.

Instant Pot BBQ Chicken Breast Sliders 

  • Minutes of prep time: 5 minutes
  • Minutes of cooking time: 20 minutes

 

 

Ingredients to make instant pot bbq chicken:

  • 2 large boneless skinless chicken breasts (about 1.5 pounds)
  • 1 cup water (or chicken broth for extra flavor)
  • 2 cups of barbecue sauce

  • Small purple onion, sliced thin
  • 12-15 kosher pickle chips
  • 12-15 dinner rolls

 

Instructions for Instant Pot BBQ Pulled Chicken:

Place a trivet in the bottom of the Pot and add, place chicken breasts in a single layer and add a cup of water (or chicken stock). Close the lid and seal the pressure valve. Pressure cook on high for 9 minutes. (Make sure the valve is moved to the sealing position.)

Once the breast meat is finished cooking, let the steam naturally release for 8-10 minutes. Then move it to the venting position to do a quick release to release the remaining pressure. (Natural Release is when the cooking feature stops, and you just let it sit before you touch the Instant Pot.)

Remove the cooked chicken from the instant pot and pour out the water. Shred the chicken and return it to the instant pot. Turn the InstantPot to the sauté function. (Remove the trivet.)

 

 

Add the BBQ sauce on top of the chicken breasts and sauté for 1 minute.

Instructions if you want to make the sliders:

Half the rolls with a knife and place the bottoms of the rolls in a 9 x 13 baking pan. Spread the saucy pulled chicken across the rolls, top with sliced onions, pickles, and then the top bun.

Broil sliders on high for 90 seconds (or less depending on your oven. Keep a close on to prevent burning.).

Remove and serve.

 

 

If there are any leftovers, store them in an airtight container for 3-4 days.

Notes:

  • You can substitute the for boneless skinless chicken thighs.
  • Serve this meal with potato salad, sweet potatoes fries, or brown rice! It’s all about using what you already have in your home! No need to make a special trip to the grocery store.
  • You can make your own BBQ sauce – I love a good BBQ sauce!
  • Double or triple the recipe to make a big batch of this meat to use in a few meals during the week.

Instant Pot Pulled BBQ Chicken Sliders

This is a basic recipe for Instant Pot BBQ Chicken! Use it to make these easy BBQ Chicken Sliders! sliders!

Cook Time 15 minutes
Additional Time 10 minutes
Total Time 30 minutes

Ingredients

  • 2 large chicken breast (about 1.5 pounds)
  • 2 cups of BBQ sauce
  • 1 small purple onion, sliced thin
  • 12-15 kosher pickle chips
  • 12-15 dinner rolls

Instructions

    Place chicken breasts in the instant pot on a trivet and add a cup of water. Close the lid and seal the pressure valve. Pressure cook on high for 9 minutes.

    Let the Instant Pot release the pressure once finished cooking for 8-10 minutes. Then do a quick release to release the rest of the pressure.

    Remove the chicken from the instant pot and pour out the water. Shred the chicken and return it to the instant pot. Turn the InstantPot to the sauté function.

    Add the BBQ sauce and sauté for 1 minute.

    Half the rolls with a knife and place bottoms of rolls in a 9 x 13 baking pan. Spread shredded BBQ chicken across the rolls, top with sliced onions, pickles, and then the top bun.
