Gluten Free Muffin Recipe – Lemon Poppy Seed Muffin Bites

Need a recipe for gluten free muffins? You need to try this recipe! They are low-calorie and high protein! This recipe is also really nice because you can switch out the type of flour and make these simple gluten free muffins. Or if you want you can use all-purpose flour. 

 

This is a easy gluten free recipe but please look at your ingredients to make sure that the products you use are not used on machinery that also processes products that contain gluten. 

 

My mom has recently discovered she should avoid gluten. I love to bake – but most of the things I make have regular flours that contain gluten. So I want to find more recipes that I can make so she can enjoy more muffins like gluten-free blueberry muffins with fresh blueberries or gluten-free banana muffins.

  

Gluten-free baking used to be more difficult but with all the gluten free flours available you can still enjoy great recipes. In the past you could have used almond flour or oat flour – but I have always thought that gave the products a gritty taste.

 

 

 

Now you can basically take any muffin recipe and make them gluten free muffins recipe. I can make delicious gluten-free muffins in so many flavors when I just change out the flour.

 

This recipe uses a sugar substitute instead of refined sugar – so use what you have available. I like monk fruit or Trim Healthy Mama’s Gentle sweet. (I like to make my own.) 

 

Pumpkin is a great way to cut down on the calories and add moisture to your baked goods so you can still make healthier versions of the baked goods we all love. (It’s also why people use sour cream in recipes but that has a lot more fat.)

 

Lemon poppyseed is my favorite muffin flavor. I mean chocolate muffins with chocolate chips are good too, but those are really sweet muffins disguised as cupcakes without icing!

Gluten Free Muffin Recipe Tip – Great Value (Walmart brand) All-Purpose Gluten Free Flour is the brand best. It works as an equal replacement and includes xanthan gum. King Arthur also has an AP GF Flour with xantham gum. Bob Red mill GF Flour is also good but more expensive and does not include xanthan gum.

 

  • It is best if the eggs are room temperature, but if you are in a hurry you can use cold eggs.
  • You don’t need paper liners in your muffin cups – they should slip out easily!

 

 

 

Notes: 

  • I’ve included the cup measurements, but to get the most accurate calorie, fat, protein, I have added the ingredient amounts in grams. Use a kitchen scale to properly measure the ingredients.
  • To use your gram scale, select the Unit (grams) and place your empty bowl on the scale. Press the Tare button to zero out the weight and add in your ingredients (whey protein for example, adding in enough until you get to 30g).
  • You can use the same medium bowl and press Tare to zero out the weight after each ingredient OR you can pre-measure all your ingredients into separate dishes and then add them into one bowl for the final mix.

Gluten Free Muffin Recipe – Lemon Poppy Seed Muffin Bites

Makes:16 | Prep time: 10 minutes | Bake time: 8-10 minutes

Ingredients:

  • 1/3 cup pure pumpkin (120 grams)
  • ¼ cup apple sauce (30 grams)
  • ½ cup vanilla whey protein powder (30 grams)
  • 4 tablespoon gluten free all-purpose flour (30 grams)
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon sugar substitute such as Trim Healthy Mama Gentle Sweet (or equivalent alternative) (2-4 grams)
  • 1 tablespoon lemon juice (fresh or concentrate)
  • 1 tablespoon poppy seed

 

 

Instructions:

 

 

In a large bowl mix together your dry ingredients, and in a separate bowl, mix together your wet ingredients, then combine them.

 

 

 

Spray your bite-size muffin pan with cooking spray. I prefer a spray made with coconut oil.

 

 

Fill each square ¾ full with muffin batter. Bake at 350° for 8-10 minutes.

Place on a wire rack for a few minutes before removing muffin bites. Store them in an airtight container for up to 3 days.
