My husband is a student pastor. Every week I serve dinner for about 50 people after our time with the youth group. We have a few kids and adults that are gluten-free so I try to make sure I have yummy dessert options for them to enjoy. 

It’s hard to find the perfect combination of ingredients that create a  cookie that tastes like “regular” cookies but they are made without flour.

With just 7 ingredients you can enjoy cookies or prepare some gluten-free cookies for your friends! I wouldn’t call them healthy gluten free cookies but they are perfect when you need a sweet treat!

Gluten Free Cookie Recipe – With Oatmeal, Chocolate Chips, and Peanut Butter!

 

If you are looking for a Gluten Free Cookie Recipe - this is it!! It's a flourless cookie with oatmeal, peanut butter and chocolate chips!

 

Ingredients:

  • 2 large eggs, at room temperature
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 cups creamy natural peanut butter
  • 1 cup gluten-free quick oats
  • 2 teaspoons baking powder
  • ¾ cup dark chocolate chips

 

Line a baking sheet with parchment paper and set aside.

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl, cream together eggs, and both sugars.

Add the peanut butter to the eggs and sugar mixture – mix well.

Fold in the quick oats, followed by the baking powder. Mix until all ingredients are well incorporated.

Fold in the chocolate chips.

Using a small ice cream scoop, drop cookie dough onto a lined baking sheet (it should be about 2 tablespoons worth), spacing them out 2 inches between each other.

Bake for 11-13 minutes. Remove from the oven and allow to sit for a couple of minutes. Remove from the cookie sheet and allow them to cool on a wire rack before serving.

Enjoy them with a big cup of milk!
