Tips to make the best vanilla mug cake recipe:

  • You can replace the milk with your favorite milk, like soy milk, oat milk, or almond milk. You can easily change up these ingredients to make a vegan vanilla mug cake.
  • You can use salted or unsalted butter. You can also substitute the butter for vegetable oil – but I prefer it with butter.
  • Pure vanilla extract is always going to be more flavorful, but you can use imitation vanilla extract.
  • Turn it into a Nutella mug cake by adding a dollup of Nutella on top as soon as it comes out of the microwave.
  • The mug size is important – make sure you have about 2 inches from the top of the wet batter to give the cake some room to rise while cooking.

Ingredients you need to make a Microwave Mug Cake Recipe – Vanilla

  • 2 tablespoons butter, melted
  • ¼ cup milk
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1/8 teaspoon salt
  • Frosting and toppings of choice

 

How to make the vanilla cake:

Grab a large microwavable mug and spray with non-stick spray and set aside.

 

In a small bowl, combine the wet ingredients – melted butter, milk, sugar, and vanilla.

Add the dry ingredients, flour, baking powder, and salt. Mix just until the ingredients are combined.

Pour the batter into a large microwave-safe mug.

Microwave on high power for 90 seconds, then check for doneness. An easy way to check is with a toothpick inserted into the center should come out clean. If the cake is not fully cooked, microwave for an additional 30 seconds or until done.

Cool slightly, then add the toppings of your choice and enjoy.

Topping ideas: pre-made frosting, whipped cream/Cool Whip, chocolate sauce or hot fudge, caramel sauce, mini marshmallows, chocolate chips, chopped candy bars, sprinkles, chopped nuts, M&M’s, ice cream, fresh berries, Nutella, peanut butter, cinnamon and brown sugar, sliced fresh bananas, etc.
  • You can double this recipe! You can make them in separate mugs or in one large mug. If you make it in one mug, you will need to add additional cooking. Add 30 seconds, then check to see if it’s done. Add 20 seconds and check again.
  • Grab your biggest mug for this recipe so the batter doesn’t overflow. To be safe, add a microwave safe plate under the mug.
  • If you have leftover, covered the cake and stored in the refrigerator for up to 2-3 days.

  • There needs to be a good bit of room in the mug for the cake to rise. Otherwise, there will be a messy overflow! If someone is concerned about the possibility of the cake overflowing, they can place the mug on a microwave-safe plate.
  • Any leftover cake can be covered and stored in the refrigerator for up to three days.
