Ingredients
- ¾ cup milk
- 2 eggs
- 1 teaspoon vanilla
- 1 cup sugar
- ¼ cup oil
- ½ cup unsalted butter, softened
- ½ teaspoon salt
- 1½ teaspoons baking powder
- 1½ teaspoons cinnamon
- 1½ cups flour
Swirl topping
- 3 Tablespoons sugar
- 4 teaspoons cinnamon
Cinnamon Vanilla Buttercream Frosting
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2½ teaspoons cinnamon
- 1 teaspoon vanilla
- ½ teaspoon salt
- 2–3 Tablespoons milk
Instructions
- Preheat oven to 350°F and line your cupcake pans.
- Using a handheld or stand-up mixer, cream together sugar and softened butter until combined. Add in eggs, milk, oil, vanilla, cinnamon, and baking powder. Mix well.
- Stir in the flour until combined. Make sure you scrape the sides to incorporate all the ingredients.
- Fill cupcake liners about ⅔ full.
- Mix the swirl topping and sprinkle generously over each cupcake.
- Bake for 15–18 minutes or until a toothpick comes out clean. Let cool completely.
- For the frosting, beat butter with cinnamon, vanilla, and salt. Add powdered sugar, then milk until smooth and fluffy.
