Ingredients
Chocolate Easter Cupcakes
- 1 box chocolate cake mix + ingredients listed on the box
- 1 small box chocolate pudding mix
- 24 mini Cadbury eggs (frozen)
Chocolate Buttercream Icing
- 2 sticks butter, softened
- 1 cup cocoa powder
- 2/3 cup hot water
- 1 1/2 teaspoons vanilla
- 8 cups powdered sugar
Cupcake Instructions
Preheat oven to 350°. Line cupcake tins (makes 24).
In a large bowl, combine cake mix, pudding mix, and ingredients listed on the box.

Add a spoonful of batter to each liner. Place a frozen Cadbury egg in the center. Cover with more batter, filling only 3/4 full.
Bake for 18 minutes.
Tip: Freeze the Cadbury eggs for a few hours before baking. This helps them keep their shape inside the cupcake.

Chocolate Buttercream Instructions
In a stand mixer, combine butter, cocoa powder, hot water, vanilla, and 3 cups powdered sugar. Mix on low until combined.
