Green Salsa Recipe

We spent some time living in Mexico City, Mexico! We love the food and the love of the people. You were always invited over for a meal or a cup of coffee. We especially loved when they had fiestas so we could enjoy more traditional foods.
We are big sports fans so whenever there was a big game on TV we would invite our friends over. We would have lots of food. Tacos were our favorite! They were perfect to eat while sitting in front of the TV.
We no longer live in Mexico but we still enjoy tacos and sporting events. While I was shopping at Walmart for food to enjoy this weekend while watching basketball, I discovered Delimex chicken taquitos and beef & cheese tacos. These are some of my favorite Mexican foods, but they can be a lot of work to make at home!
Delimex chicken taquitos and beef & cheese tacos are so easy to heat and serve! I wanted to make it even more traditional and spice them up and eat them like we use to in Mexico! These tacos are perfect by themselves, but they are even better when you add some traditional salsa and other ingredients.
After you heat them, you have to add some Mexican Creama. This is a little like sour cream - but not as tart. You can find this at most grocery stores. To be more authentic, you need to add just a little milk to it so it is a little thinner. Next shred up some lettuce to add on top. After that comes queso blanco fresco (fresh white cheese), you have to crumble it a little and sprinkle it all over your tacos. And last, to spice it up a bit, you top it with a little green salsa! Here is my recipe for green salsa.
Green Salsa
- 6 tomatillos, shell removed and chopped
- 1 garlic clove, chopped
- 4 Tablespoon of chopped onion
- 1 Jalapeño - seeds removed (the more seeds the spicier the salsa)
- 1-½ teaspoon salt
- Water
Instructions:
- In a medium saucepan, add all the ingredients. Add enough water to cover the ingredients.
- Let simmer for about 10 minutes.
- Strain the ingredients and add them to a blender. Reserve the water.
- Blend and add a little water until you have your desired consistency.
- Serve with your favorite Mexican rice!
Top the taquitos with the green salsa, Mexican cheese, and lettuce for a delicious meal!
It is hard to find foods in the US that are as good as I remember them in Mexico, but I think we have found a way to enjoy hard tacos (tacos dorados) again!
If you will be hosting any parties over the next few weekends, impress your guests with this crowd-pleasing snack. Spend more time enjoying time in front of the TV than in the kitchen!

It's always hard to find really good Taquitos there was a restaurant I really loved that made them but that was ages ago and they are gone now. I agree most of the food here does not taste like it does in Mexico. I like to visit there and this reminds me that I haven't gone in awhile, I am so over the cold weather in the Northeast this makes me want to hop a plane right now!

Mexican food is a family favorite around our house and I think that comes from living in the Southwest my entire life. Green sauce is always my favorite since it tends to be more mild than red.
